WORK HISTORY

Manager Health and Nutrition Services CDI Head Start Serving Clark County
Responsible for the facilitation of Health Services (mental, dental, nutrition services and child safety) of
the Head Start and Early Head Start Program. The main objective of this position is to ensure that the
children are provided with age appropriate health services mandated by state and federal guidelines;
these include physical exams, immunizations, dental exams and treatment, and behavioral screens. I also
oversee the Child and Adult Care Food Program (CACFP) which entails writing the menus and
supervising the preparation and service of approximately 2,000 meals per day.
November 2004 to Present
Self employed performing translations services for the Southern Nevada Health District; Great Basin
Primary Care; Coast Casinos; South Point Hotel and Casinos and Boyd Gaming.
Additionally I serve as a Consultant Dietitian for the Nevada Division for Aging Services. I write and
analyze their menus, give presentations and answer questions pertaining to food and nutrition via their
web site.
October 2003 – November 2004
Child and Adult Care Food Program (CACFP) Coordinator, Office of Child Nutrition and School
Health, Nevada Department of Education, Las Vegas, NV
Responsible for the administration of the CACFP program in child care and Head Start centers
throughout the state. Duties included: providing training and technical assistance to program staff;
conducting administrative reviews; writing reports; conducting outreach into the community; developing
educational materials; reviewing and approving applications.

Assistant Director Increasing Diversity in Nevada (IDIN), University and Community College System
of Nevada, Las Vegas, NV
Duties and responsibilities included; coordinating and scheduling activities and events for IDIN;
tracking the budget; networking and developing partnerships with school district staff, University
system personnel and community agencies in order to enhance development of IDIN programs; creating
and distributing correspondence to participating schools; developing, translating and disseminating IDIN
materials; recruiting and hiring student personnel.

Responsible for conducting health education sessions in community settings such as schools,
community centers and social service agencies; serving as an advocate for Latino health issues;
performing coalition building functions; conducting research, developing media campaigns and grant

Major responsibility was to implement a collaborative nutrition education project between Cooperative
Extension and WIC. Duties included training and supervising paraprofessionals; enhancing client
recruitment; adapting and/or developing culturally sensitive educational materials written in Spanish;
evaluating project impact; and assisting in preparing project budgets and reports.
