Laboratory Safety and Sanitation Expectations
The following safety and sanitation procedures must be followed during lab. This will minimize the risk
of physical injury and food poisoning. Please read the following rules, discuss them with your parents
and sign the back page. You will be responsible for following these rules and passing the safety tests for
using appliances and equipment. Please return the signed back page of this document to your teacher by
______________________. Keep this copy of safety and sanitation procedures for future reference. This
material will appear on tests.
To prevent falls I agree to…
1. Wipe up all spills immediately.
2. Reach items stored in high places using a sturdy stepstool.
3. Close cabinet drawers and doors.
4. Always wear closed-toed, rubber soled shoes during lab.
To prevent cuts I agree to…
1. Keep knives sharp using proper sharpening techniques.
2. Always use a cutting board with a damp towel placed underneath it.
3. Cut away from the body with the blade slanted.
4. Never try to catch a falling knife and step out of its way.
5. Wash, dry and store knives separately from other dishes and utensils.
6. Keep fingers away from moving parts and blades of appliances.
7. Use knives and other sharp tools for their intended purpose.
8. Sweep up broken glass immediately.
9. Use a damp towel to pick up small shards of glass, never bare hands.
10. Open all metal cans in the correct manner, completely removing the lids.
11. Never leave sharp knives in a sink full of water.
To prevent fires and burns I agree to…
1. Put out grease fires by smothering them with a lid, a fire extinguisher, or with salt or baking soda.
Never use water.
2. Keep flammable materials away from cooking surfaces and portable appliances that produce heat.
3. Use a dry potholder to remove pans from the range.
4. Use the designated metal can to discard leftover fats, not the sink or trashcan.
5. Keep pan handles turned inward on the range.
6. When removing a pan lid, tilt the lid away from the body. Never hold the face directly over the
pan.
7. When removing a pan from the oven, pull the rack out. Don’t reach into the hot oven.
8. Use both hands to remove pans from the oven.
9. Check to be sure all appliances are turned off when finished.
10. Use a spoon or tongs, NOT fingers, to remove food from or place foods in hot liquid.
11. Turn off the gas range if there is a smell of gas. Notify the instructor immediately.
12. Wear goggles when frying foods.
To prevent electric shock I agree to…
1. Keep electrical cords away from water and hot objects.
2. Not plug several cords into an electrical outlet at one time.
3. Unplug portable appliances after using them.
4. Disconnect appliances before cleaning them. Do not put them in water unless the appliance is
labeled submersible.
5. Make sure your hands are dry and you are standing on a dry surface before using appliances.
6. Turn off appliances before bring objects into contact with any working parts.
7. Plug the cord of portable appliances in to the appliances first, then into the wall.
8. Pull the plug of an appliance out by the plug, not the cord.
To prevent microwave accidents, I agree to…
1. Not use the microwave if the door appears damaged.
2. Never turn on a microwave if there is not food inside.
3. Use potholders to remove food containers from the microwave.
4. Avoid steam burns by carefully removing lid and plastic wrap.
5. Never put metal objects inside the microwave.
General lab rules which I agree to…
1. Absolutely no towel snapping.
2. No fooling around in the lab.
3. Pay for equipment that is broken through negligence or fooling around. This includes
housewares and appliances.
4. Take exact food amounts provided for the lab. If too much product is taken, there will not be
enough for everyone.
5. Never throw food or other objects during a lab.
6. Listen carefully to pre-lab instructions. This means being on time to lab.
Sanitation procedures I agree to…
1. Head and hair must be covered. Refrain from brushing hair during lab.
2. Wear an apron. Wear appropriate, clean clothing on lab days. Avoid long, loose sleeves, sashes,
and dangling jewelry.
3. Wash hands thoroughly with soap and hot water before beginning the lab, after visiting the
restroom or taking out the trash. Keep hands away from the face or any contaminating surface.
4. Place personal belongings in the designated area of the classroom. Do not take personal items
into the lab area.
5. Avoid working with food with an open wound on the hands.
6. Never sit on counters or tables.
7. Use hot, soapy water for washing dishes. Wash dishes, pans and utensils as they are used. Allow
them to air-dry when possible.
8. Thoroughly clean the kitchen before leaving the lab.
9. Clean and sanitize all surfaces that come into contact with foods.
10. When possible, use a kitchen tool, not bare hands to complete tasks.
11. Use a separate spoon for tasting food. Use a clean spoon each time a food is tasted.
12. Students with artificial nails are responsible for bringing in disposable gloves to wear during lab.

We have read the Safety and Sanitation Procedures for working in the foods lab. We agree to the
procedures and understand that if the student named above does not follow a procedure he/she
will be in violation of the safety rules for this class and Canyon del Oro High School and may
therefore be dropped from the class. We also understand that if the student named above
breaks a piece of equipment (large or small) through negligence or horseplay the student and
parent/guardian will be charged for replacing the equipment.
