Magnesium is often called the “Magical Mineral”. It is an essential mineral nutrient for life and is
present in every cell type in all organisms. Over 300 enzymes require the presence of magnesium
ions for their catalytic action.
Magnesium Chloride FCC is used in several food applications. The main areas of use in food are:




As a source for Magnesium fortification in food and beverage products.
As a main coagulant in Tofu; it is also referred to as “Nigari.”
In the production of certain food grade enzymes.
Infant formula/Nutritional drinks
Substituting Japanese “Nigari” with E & I’s Magnesium Chloride FCC:
“Nigari” is the Japanese term for Magnesium Chloride from sea water. E & I’s Magnesium Chloride
FCC is a direct replacement for “Nigari” for tofu production and other applications. There is no
perceived difference in touch or texture characteristics when using E & I’s Magnesium Chloride
FCC as the main coagulant.
Description:
E & I’s Magnesium Chloride FCC is sold as Magnesium Chloride Hexahydrate with a chemical
formula of MgCl2•6H2O. It is extracted through the evaporation of sea water and is then milled into
flakes; see the Process Flow Chart on page 2.
