Purpose
People credited with this unit standard are able to: identify and
document current usage of resources within the hospitality
industry, and environmental and resource efficiency issues and
environmental hazards; comply with environmental regulations
that affect the hospitality industry; and identify and document
opportunities to improve environmental resource efficiency in
the hospitality industry.

Definition
Establishment requirements – refer to any policy, procedure, or agreed requirement,
either written or oral, that is made known to the candidate prior to assessment in this
unit standard.

Candidates undertaking assessment against this unit standard are expected to
comply with the – Health and Safety in Employment Act 1992 and Health and Safety
in Employment Regulations 1995, Resource Management Act 1991, and Hazardous
Substances and New Organisms Act 1996.

The Hospitality Standards Institute acknowledges the assistance provided by Service
Skills Australia in permitting unit of competency SITXENV001A Participate in
environmentally sustainable work practices to be used as the basis for this unit
standard.

This unit standard applies to the cookery, food and beverage, food services, quick
service restaurant and accommodation sectors.

Outcome 1
Identify and document current usage of resources within the hospitality industry, and
environmental and resource efficiency issues and environmental hazards.

Environmental and resource efficiency issues are identified in accordance with
establishment requirements.
Range

not limited to – minimisation of environmental risks and
maximisation of opportunities to improve establishment
environmental performance, minimisation of waste, efficient
energy use, efficient water use;
