Classification Hospitality > Hospitality - Generic Available grade Achieved Explanatory notes 1 Definition Establishment requirements – refer to any policy, procedure, or agreed requirement, either written or oral, that is made known to the candidate prior to assessment in this unit standard. 2 Candidates undertaking assessment against this unit standard are expected to comply with the – Health and Safety in Employment Act 1992 and Health and Safety in Employment Regulations 1995, Resource Management Act 1991, and Hazardous Substances and New Organisms Act 1996. 3 The Hospitality Standards Institute acknowledges the assistance provided by Service Skills Australia in permitting unit of competency SITXENV001A Participate in environmentally sustainable work practices to be used as the basis for this unit standard. 4 This unit standard applies to the cookery, food and beverage, food services, quick service restaurant and accommodation sectors. Outcomes and evidence requirements Outcome 1 Identify and document current usage of resources within the hospitality industry, and environmental and resource efficiency issues and environmental hazards. Range environmental and resource efficiency issues may include but are not limited to – minimisation of environmental risks and maximisation of opportunities to improve establishment environmental performance, minimisation of waste, efficient energy use, efficient water use; evidence of two is required. 1.2 Resources used in own work role are identified in accordance with establishment requirements. 1.3 Current usage of resources is identified and documented in accordance with establishment requirements. Range 1.4 may include but is not limited to – examination of invoices from suppliers, analysis of resource orders placed and resource audits, observation of usage, measurements made under different conditions, examination of relevant information and data, monitoring equipment usage, monitoring wastage; evidence of two is required. Workplace environmental hazards are identified and documented in accordance with establishment requirements. Outcome 2 Comply with environmental regulations that affect the hospitality industry. Evidence requirements 2.1 Environmental procedures are followed in accordance with establishment requirements. Range 2.2 may include but is not limited to – meeting central and local government laws, by-laws and regulations; meeting the requirements of industry codes of conduct; evidence of two is required. Environmental breaches and/or potential breaches are reported to appropriate personnel in accordance with establishment requirements. Outcome 3 Identify and document opportunities to improve resource efficiency in the hospitality industry. Evidence requirements 3.1 Plans to improve environmental practices and resource efficiency are identified and followed in accordance with establishment requirements.
