A good place to start - Roy Blount's Book of Southern Humor. It's humorous essays from a variety of southern writers. Blount himself is a southern humorist writer.

I don't know if this would work or not, but one of my favorite short story authors is Bailey White. She is from Georgia. In Mama Makes Up Her Mind, there is a story about turkey eggs being placed in her bed when she was running a high fever that is pretty hilarious.

