NZQA registered unit standard 28605 version 1 Page 1 of 3 Title Demonstrate knowledge of ethanol processing in a dairy processing operation Level 3 Credits Purpose 5 This theory-based entry-level unit standard is for people carrying out milk product processing in a dairy processing operation. People credited with this unit standard are able to demonstrate knowledge of: the ethanol distillation process, and the ethanol fermentation process, in a dairy processing operation. Classification Dairy Processing > Milk Products Available grade Achieved Explanatory notes 1 Legislation relevant to this unit standard includes but is not limited to the Animal Products Act 1999, Health and Safety in Employment Act 1992, and Animal Products (Dairy) Regulations 2005. 2 Definition Organisational requirements – Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. These requirements include but are not limited to – site specific requirements, company quality management requirements, hygiene, health and safety, regulatory and legislative requirements. Outcomes and evidence requirements Outcome 1 Demonstrate knowledge of the ethanol distillation process in a dairy processing operation. Evidence requirements 1.1 The distillation process is described in terms of the equipment used. Range equipment includes but is not limited to – tray and plate towers, reboilers, condensers, column sections; process includes but is not limited to – vapour, liquid flow rates, column performance. Range 1.3 purification process includes but is not limited to – concentration profiles, boiling and rectifying columns, azeotropes, extractive distillation, dehydration processes. The distillation process is described in terms of process and quality control requirements. Range 1.5 physical properties include but are not limited to – density, vapour, pressure, volatility. The purification process is described in terms of its relationship to the distillation process. Column performance is described in terms of the distillation process and outcomes. Outcome 2 Demonstrate knowledge of the ethanol fermentation process used in a dairy processing operation. Evidence requirements 2.1 The ethanol fermentation process is described in terms of the fundamental processes and principles. Range 2.2 The process of whey production is described in terms of its composition. Range 2.3 composition includes but is not limited to – milk, casein, whey. The ethanol fermentation process is described in terms of the microbiological processes involved. Range 2.4 processes include but are not limited to – aerobic and anaerobic fermentation, feedstocks. processes include but are not limited to – microbiology and microbial growth parameters, yeast physiology, yeast propagation, microbial contamination. The process of alcohol fermentation is described in terms of its relationship to the ethanol fermentation process.
