1.01BB Safe and Sanitized Accordion Graphic Organizer Instructions Teacher Background: This activity will compare food safety and food sanitation. The accordion graphic is an easy way to record information that is presented in class. Be sure to have an accordion graphic organizer made up in advance to show students an example of the finished organizer. Equipment needed Nine 8 ½ inch squares of paper preferably card stock Two pieces of cover paper, cardboard or foam board cut into 4 ½ inch squares Ribbon 25-30 inch piece Hot glue gun or spray adhesive Colored pencils or markers, photos and pictures from magazines Directions Picture diagrams on following pages. 1. Fold on dotted line from A to B and C to D. Bend paper both ways. It should be easy to fold over either way. 2. Fold along the line that runs from 1 to 2 and 3 to 4. 3. Do this folding technique to all nine sheets. (Make sure that the folds are moving both ways.) 4. Glue the nine pieces of paper together as follows: D is glued over C C is glued over B B is glued over A 5. Go back re-crease all folds 6. Fold the sheets again as follows: Points A and B fold toward you. Points C and D fold away from you. Points E and F fold toward you. Points G and H fold away from you. 7. Glue the portion of the organizer as shown above; glue all nine sheets. 8. Set aside for glue to dry. 9. On each page of the organizer the students will write an area of food safety and then write the criteria for each area. Pictures may also be included with the criteria. 10. Choose a piece of cover paper that will be the back of the book. 11. Glue the ribbon to the center of this piece of paper. This will make the closer. 12. Glue the cardstock or foam board to the back piece of paper, so that the ribbon is hidden inside. Glue the cover piece on to the cardstock. 13. Using the same type of covering that was used on the back, do the front side. Skip the ribbon on the front. 14.
