NZQA registered unit standard 23832 version 2 Page 1 of 3 Title Operate an individual quick frozen (IQF) cheese freezing process Level 3 Purpose Credits 5 This unit standard is for people working in a cheese factory or the cheese manufacturing department of a dairy manufacturing plant. People credited with unit standard are able to: prepare an IQF cheese freezing process for operation; operate and monitor an IQF cheese freezing process; and shut down an IQF cheese freezing process. Classification Dairy Manufacturing > Cheese Making Available grade Achieved Explanatory notes 1 Legislation Legislation relevant to this unit standard includes but is not limited to the Animal Products Act 1999, Health and Safety in Employment Act 1992, and Animal Products (Dairy) Regulations 2005. 2 Definitions Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. Individual quick frozen (IQF) process – cheese process using either direct or indirect refrigeration equipment specifically designed to rapidly freeze shredded or diced cheese to -15 degrees C or lower whilst maintaining the functional properties of the original cheese materials. Materials – single cheese and multiple cheese blends such as Mozzarella, Cheddar, Colby, Parmesan, and Shreddar (low fat). Processes – batch or continuous and apply to single or multiple product specifications or types. 3 This unit standard must be assessed in a realistic workplace environment. The candidate must be under realistic time pressures and use relevant commercial equipment. Evidence requirements 1.1 Materials meet operating requirements. 1.2 Cleaning and maintenance requirements and status are identified and confirmed in accordance with organisational requirements. 1.3 IQF cheese freezing process components and related attachments are fitted and adjusted in accordance with organisational requirements. 1.4 Processing and/or operating parameters are entered as required in accordance with safety and organisational requirements. 1.5 Equipment performance is checked and adjusted in accordance with organisational requirements. 1.6 Pre-start checks are carried out in accordance with organisational requirements. Outcome 2 Operate and monitor an IQF cheese freezing process. Evidence requirements 2.1 The IQF cheese freezing process is started and operated in accordance with organisational requirements. 2.2 Equipment is monitored to identify variation in operating conditions in accordance with organisational requirements. 2.3 Variation in equipment operation is identified and maintenance requirements are reported in accordance with organisational requirements. 2.4 The process is monitored to confirm that temperature, line-flow rate and individual quick frozen cheese particles meet specifications in accordance with organisational requirements. 2.5 Out-of-specification product and/or process outcomes are identified, rectified and/or reported to maintain the process within specification in accordance with organisational requirements. 2.6 Workplace records are maintained in accordance with organisational requirements. Evidence requirements 3.1 The shut down procedure is identified in accordance with organisational requirements. 3.2 The IQF cheese freezing process is shut down in accordance with organisational requirements. 3.3 Maintenance requirements are identified and reported in accordance with organisational requirements.
