I have carefully selected all the wines on this list with the help of my wine merchant based in Edinburgh, l’Art du
Vin. Their focus is to supply quality wines from small, independent producers that are made with passion and
integrity whilst being true to environmental issues. Their wines are a true expression of their origin and fit with my
passionate approach to food.

James Close
After 16 generations this prestigious Champagne house is still run by the Philipponnat family. Based in MareuilsurAy in the heart of Champagne, their production is
tiny compared to well-known Grande Marques brands. Particularly known for its Pinot Noir production, Champagne Philipponnnat owns 17 hectares of Grands Crus
and Premiers Crus vineyards. They are also known for using a large amount of “Vins de Reserve” vinified in oak barrel which give their wines their trademark
structure and depth. Champagne Philipponnat is represented by many Michelin starred restaurants around the world.

Little Beauty
Little Beauty is a small boutique winery and its vineyards are situated next to the Waihopai River and face the famous and picturesque Richmond
Range. They are sheltered but have taken advantage of their northwest orientation which ensures excellent ripening conditions. Jason is the
viticulturist and Eveline is the wine maker, who used to be the senior wine maker at Cloudy Bay.
The wines literally are little beauties. Under the careful management of Eveline, the wine making process delivers true Marlborough wines,
however, they are exquisitely elegant and feminine, the flavours are expressive but refined and they will either be enjoyed on their own, or they
will be capable of matching very sophisticated food.

now grow very successfully. Jamie McCulloch, originally from Edinburgh, set up his tiny winery a few years ago and now sell on
allocation only due to high demand. A great alternative to Sauvignon Blanc, ripe Fendant is fresh, zesty but fleshy with juicy yellow plum
characters and an herbal and savoury finish. A great match to James’ delicate dishes.

What is Biodynamic Viticulture?
Biodynamic viticulture, like Organic viticulture, does not use the herbicides or pesticides employed in conventional grape
growing. By respecting the soil as a living element, it nurtures the vines, imbruing them with mineral and organic trace
elements.
Biodynamic viticulture goes a step further than Organic viticulture: it also takes into consideration the pattern of lunar and
cosmic rhythms. The soil is seen not simply as a support for vine growing, but as an organism in its own right. This
approach to agriculture was common practice throughout Europe during the Iron Age. It disappeared with the emergence
of modern agriculture. It was Rudolph Steiner, an Austrian philanthropist, who reintroduced this practice. The number of
wine producers embracing Biodynamy is constantly growing, especially in France and Italy.

De Martino Family Estate – Maipo Valley - Chile
Isla de Maipo, a small town around 50 kilometres from the Chilean capital of Santiago, houses the De Martino
winery, one of our exciting new producers. Originally established in 1934 by Pietro De Martino Pascualone, who
had left this native Italy to found a vineyard in the new world, the estate is located in a prime viticultural position,
on the banks of the now arid Maipo River. The fact the valley previously accommodated the ferocious torrents of
the Maipo gives soil conditions which are unique in the region, alluvial earth with high silt levels – great for the
cultivation of vines.
As well as unique soils, the estate also harbours a unique mentality in Chile, the entire establishment following an
eco-friendly approach that has rendered the De Martino winery the first carbon-neutral domaine in Latin
America. It is also fully organic, and facilitates the production of Latin America’s first carbon-neutral range of
wines.

The winery "Les DeuxCimes" was founded in 2007 by Jamie S. McCulloch, originally from Edinburgh, a year after completing his enologist degree
in winemaking and viticulture from Changins, Switzerland. Drawn towards the Swiss Alps, and the Valais in particular, the Scottish wine maker
was fascinated by the huge potential of the region and in particular, the long list of grape varieties grown here, and the very particular mountain
terroir. The varied geology, aspect and climate of the south facing mountains slopes of the central valley sparked the idea of producing a range of
wines under the heading of "Swiss Alpine Wines".
The winery in Varen, concentrates on cultivating five grape varieties, and aging eight wines. Many of which are barrel aged, and blending
traditional and modern wine making techniques, to give wines that reflect their origin and the passion involved in their making.

Château Haut Peyrous is located in the Graves appellation of Bordeaux and is owned by Marc Darroze. From a family of restaurateurs, Marc
initially ventured into the field to source new Armagnacs for the lists in the Darroze’s various eateries, but in 2007 he decided to devote his time
to viniculture, prompting the purchase of this estate.
Similarly to every project a member of the Darroze family has taken on (his father Francis’ restaurant is held in high regard across all of France,
while his sister runs a restaurant in London which has been awarded two Michelin stars), Marc cultivates his vines in a search for perfection,
aiming to produce wines of the utmost quality that contain personality and represent the region’s wonderful terroir.

Monsieur Lardy, the proud proprietor of Domaine Lardy who produces a sensational Fleurie “VieillesVignes” made with the indigenous Gamay
grape variety. Far from being similar to the commercial and simple Beaujolais Nouveau, this Gamay based wine has a lot of structure, similar to its
Pinot Noir neighbours. Yet, we found itvery approachable and soft, so much so that we decided to offer it by the glass.
