Sirugue, Taransaud, Cadus, Francois Freres, & Damy; Allier and Centre France; Medium, & Medium+ Toast. Fruit was hand-picked and harvested between Sep 26th and Oct 13th. The fruit was hand-sorted and held in a cold 5-7 day pre-ferment maceration. During the 10-12 day indigenous fermentation the cap was punched twice per day until dryness. After pressing, the wine settled for a few days prior to movement into barrels where it underwent the malolactic fermentation throughout the winter. The wine spent a total of 16 months in French oak barrels, 9 months sur-lie in 25% in new French barrels with lees stirring monthly. Subsequent 7 months spent off lees in 100% neutral barrels. 830 cases were bottled on March 13th, 2009.
