2015 TSNA Culinary Specialist Training
Requirements:
The participant MUST:
 Attend entire week of the Culinary Academy (March 2015) Location Lebanon, TN
 Attend the 2015 TSNA Conference
 Agree to train his/her district at least 10 hours of culinary skills.
 Be SNA Level I Certified.
 Complete and submit the attached application.
 Submit a one page essay on why you wish to be a Culinary Specialist. This will be
graded.
The local district will sponsor the participant’s registration fee ($100.00) and hotel
accommodations (we will recommend a central hotel).
Curriculum:
 Actual hands-on preparation – lunch is prepared, consumed, and critiqued by the
participants on Tuesday, Wednesday, and Thursday
 Standardized Recipes
 Training Methods
 Knife Skills/Types of Knives
 Spices
 Preparation Methods for Vegetables, Fruits, Meats, Grains/Pastas
 Merchandizing/Food Sampling/Grocery Tour/ Mystery Produce Challenge
 Mystery Team Preparation Challenge
 Food Safety
 Resources

 Knife set
 Cutting Board
 Garnishing set
 Resource Manual
 Culinary Chef Coat – at the time of graduation (worn TSNA Conference in June 2015)

Note: If candidate is selected to participate in the TSNA Culinary Specialist Certification Process he/she
must attend the entire week of training in middle Tennessee area and must attend the 2015 TSNA
Conference in (June 2015). Your signature indicates that you are sponsoring this candidate and will
provide them with time off their normal job and that your system will provide the funds (registration and
hotel accommodations) for him/her to attend the week of the training (Culinary Academy) and to attend
the TSNA conference.
