Poland is a country (…) with a beautiful and still in many places unspoiled environment, and this inspires the chefs. In recent years, Polish cuisine has changed completely. All the while drawing from a rich tradition, it is also becoming lighter, more varied, colourful and modern. From the Introduction to the “Appetite for Poland” cookery book. „Appetite for Poland”, a cookery book Polish cuisine in a creative and inspiring way In line with the leading theme of EXPO 2015, “Feeding the planet, energy for life”, Polish Agency for Enterprise Development, in cooperation with renown culinary experts, has prepared a cookery book entitled “Appetite for Poland”. This publication, which can be said to interpret the Polish culinary tradition anew, presents Poland as a country of extraordinary natural richness and of creative culinary ideas, thus contributing in a valuable way to the programme of economic promotion of Poland at EXPO 2015. - In the “Appetite for Poland” cookery book, Polish culinary tradition of several centuries gets a new dimension. We appreciate the recipes for dumplings, żurek or bigos, but at the same time, we aim to inspire a non-standard use of Polish ingredients, to re-discover somewhat forgotten food-making techniques, and to reach out for contemporary culinary trends. We notice great similarities between Polish and Italian customs – the love of feasting and entertaining guests, of cooking together and celebrating meals. We want to make use of those similarities, and at the same time to share our knowledge and experience, thus encouraging the Italians to use Polish ingredients, and the Poles to rediscover the culinary heritage of our country, says Bożena Lublińska-Kasprzak, the President of Polish Agency for Enterprise Development, responsible for organising the participation of Poland in World EXPO 2015. The readers of “Appetite for Poland” will discover new compositions and flavours, inspired by Polish as well as Italian cuisine. The recipes include: ravioli with bryndza cheese, fried rucola and brown butter, white country bread crostini with rancid white cheese and cowberry jam, Redykołka cheese stewed in butter with smoked yoghurt, romaine lettuce and Nawiślanka cherry jam or pigeon breast with green lentils stewed in mead and smoked prune sauce. A contemporary outlook on Polish culinary art is presented by experts collaborating with the “USTA” magazine, who are the authors of the recipes presented in “Appetite for Poland”: Witold Iwański, Eliza Mórawska, Michał 1 Gniłka, Marysia Przybyszewska, Grzegorz Łapanowski, and Tomasz Trąbski. The leading theme of EXPO 2015 is “Feeding the planet, energy for life”. Between 1 May and 31 October 2015 in Milan, almost 150 countries and organisations will present their achievements in agri-food industry. The organisers of EXPO 2015 highlight the educational role of the event, both in terms of promoting healthy food and seeking ways to address the problem of food shortage in some regions. Almost 150 countries will take part in the EXPO, and the organisers expect as many as 20 million visitors.
