EGG AND CHEESE BURRITO - 5 people Ingredients: 5 eggs – A & B 3 tbsp water - C salt and pepper to taste - ALL 1 TBSP butter - D & E 1 cup grated cheddar cheese B 5 flour tortillas - A 10 prepared Tater Tots - C Preparation: 1. Crack an egg into a custard cup. Remove any shells. Then place it into a small bowl. Repeat procedure with all 5 eggs. – A & B 2. In the small bowl, whisk the eggs and water together until well beaten; season with salt and pepper. - C 3. Using 1TBSP of butter, lightly coat the skillet. Warm the skillet over medium-high heat. Carefully add the eggs to the pan. Cook, mixing frequently, until you have scrambled eggs of the desired consistency. D & E 4. Warm the flour tortillas in the microwave. Place all 5 on a paper plate, cover with a paper towel, heat 20 sec or until warm and soft. - A 5. Place the tortillas on individual plates, next evenly distribute the cheese in the center of each flour tortilla.- B 6. Mash 2 Tater Tots for each tortilla, distribute evenly on cheese. - C 7. Add 1/5 (about a serving spoon size) of the eggs on top of cheese. - A&B 8. Fold opposite 2 sides of tortilla over filling and then the remaining sides, creating a package. ALL 9.
