In the Paddocks
Spring has arrived and we are expecting our new
foals a little later in the season our last season foals
are from our new stallion Fernances Creek Nutella
and they are growing up very tall and beautiful.
We have just introduced some of our mares to
Nutella again and they are happily getting to know
each other. We have started some young gelding in
showjumping and getting ready to start training
some of our 3 year olds with Lyndel Taylor and
Jeremy Inglis.
Lyndel is a very good eventer and has had great
success with our horses

Foaling Around in Fernances
Our new stallion Nutella is delivering on the
characteristics we are looking for: temperament,
beauty, height and athleticism.
Fernances Creek Rainshadow
Not even a year old and Rainshadow is developing into
a lovely, tall girl with temperament to match.
She has gone to a wonderful new home near Byron Bay
and is much loved by her new owners and their
friends.
As a foal Rainshadow was naturally inquisitive and
really stood out amongst the herd. We expect that
Rainshadow will be an asset in any discipline as well as
an
outstanding breeding
prospect.
Fernances Creek 2011 Foals
In this picture are Fernances Creek Dakota and Layla
with Myora and Avatar.
Avatar is out of Arkley Aqua is currently for sale.
These foals are having the times of their lives and are
playful with our stallions Aaron and Nutella.
Myora
Myora is by Nutella and Melody. She has a wonderful
nature and is already a good-sized filly. Myora belongs
to one of our clients who plan to train her as a riding
horse and then use her as a breeding mare. This filly is
very athletic and would make a fine eventer or
dressage mount.
Sierra is Nutella’s newest filly out of Skye.
The Italian Connection
The famous "Haflinger" horses have their origin in
the small mountain village "Hafling", which is located
in South Tyrol. The breed is also called the
"Avelignese", from the Italian word for Hafling
(Avelengo).
The Haflingers are always chestnut in color. They
vary in different shades, ranging from a light gold to a
rich golden chestnut or liver hew. The mane and tail
are always white or flaxen.
The breed was developed in Austria and Northern
Italy (South Tyrol) during the late 19th century. The
breed traces its ancestry to the Middle Ages.
Haflinger horses were developed for use in
mountainous terrain. They are known for
their hardiness. Haflinger horses have many
uses: including light draft, harness work and
you can find them in various riding disciplines
such as endurance riding, dressage,
showjumping,
equestrian
vaulting
or
therapeutic riding. The Austrian also still uses
them and German armies for work in rough
terrain.
At Fernances Creek, we are using them for
eventing, showjumping, dressage and
pleasure riding.

Steph’s Brownies
Mix dry ingredients with melted chocolate, butter and nuts.
250g unsalted butter
200g dark 70% cocoa broken up
50g chopped macadamia nuts
80 g cocoa powder, sifted
65g plain flour, sifted
1 teaspoon baking powder
360g caster sugar
4 large eggs
180 degrees/ 25 minutes
These brownies are very addictive. They are extra
gooey, crunchy and shameless.

and received excellent instruction from
showjumping master Jeremy Inglis.

Clear Autumn Colours
We had great weather and wonderful backdrop of
autumn colour, followed by a three-course lunch and
wine tasting. We hope to hold the Jump in the Vines
next year and include some cross-country training.

4-year-old gelding out of
Rosebrook and our stallion
Aaron. He completed two
months of professional
training and has now started
schooling in showjumping
and eventing. Aragon is 14
hands and is athletic. We are
hoping to see him out and
about at some Newcomer
events.

What’s happening in the Vineyard?
We have had good spring rains and It's fair to say that the Brunello Sangiovese and the Shiraz
vines are looking the best they have for 5 years. We are in the progress of pruning and getting
the meters of rows clear of weeds to conserve precious moisture during the hot summer
months. The DPI have now published the results of a 3 years study of mulch trials and found
vineyards showed a 30% reduction in water and a 30% increase in crop yield. A few years ago
we tried mulching but decided to use ground covers, clover and a no plough management
system to keep moisture in the wines. This has reduced our tractor and fuel cost and decreased
our carbon footprint. We are also using the cattle to keep the rows clean during the winter. We
still have to net the vines by hand to protect them from birds and are working on a more efficient
way of doing this.
Of course September and October is still a frost risk month so we are not out of the woods yet.
The Winery
We built the winery and tasting room with the intention of making wine here on the premises but
have found an excellent winemaker in Broke with a super modern winery that can make the
wine for us. We still intend to make small batches here but the bulk of the wine will be made in
Broke. Although the structure of the tasting room has been completed and we are planning the
interior fit out early next year. At the moment are sales are via the website and direct sales.
Sangiovese Brunello
The 2008 Sangiovese Brunello is a light style Italian wine with spicy fruit with strawberry and a
hint of vanilla and mint. This is a great wine even in the hot summer months. The 2007 vintage
has a medium body and has darker stewed fruit flavours.
A Jump in the Vines Luncheon
In June we had a Jump in the Vines day here at the farm.
The day was focused on giving the owners of haflinger
horses a chance to receive some jumping instruction from
Jeremy Inglis. Jeremy is a three-time World Cup
Showjumping winner and coach. Riders of all ages gained
some valuable training in showjumping and had a good time
with their horses.
After a morning ride, a 3-course luncheon was served and
the 2007 and 2008 Sangiovese Brunello was tasted and
served with lunch. The menu consisted of:
Slow roasted brisket and a homemade Lebanese style feast
followed by a range of tasty deserts.
The final ride in the afternoon finished with eat rider
completing a jump course and a round of farewells.
