Rome, 15 Novembre 2012 – The 2013 edition of the Michelin Guide recognizes the significant work of chef Fabio Ciervo of Rome’s Terrazza dell’Eden, the restaurant of the Hotel Eden, one of the most fascinating and intimate hotels in Italy. Just two years after his entry in the kitchen, Ciervo has been awarded his very welldeserved first Michelin star. LaTerrazza dell’Eden, which from the beginning has been an important reference point in the world of high-end restaurants in Rome, has succeeded in combining the emphasis on gastronomic quality with the extraordinary location—boasting a view of Rome’s rooftops and cupolas as far as the eye can see—without allowing one to take over the other. Instead, the two elements come together to create an unforgettable experience that one could call “panoramic cuisine.” As the Michelin Guide’s review states: “The young chef has added a seductive and incredibly varied cuisine, an unending carousel of international specialties and products: from France to the Mediterranean nothing escapes him, not even caviar.” Among the proposed dishes, besides the restaurant’s flagship — a version of Ballotin of foie gras that periodically undergoes slight variations according to the season—notable dishes include Pastificio dei Campi spaghetti with pecorino cheese, cinta senese cured bacon, Madagascar black pepper, and scented with rose buds; Roasted saddle of venison and its sausage with pistachios from Bronte, celeriac, and pear poached in Red Port; and Fillet of sea bass glazed with mixed vegetables, crayfish bocconcini, and an emulsion of oil from olives from the Santagatesi hills. At age 33, Fabio Ciervo already has years of impressive international experience behind him, including time at the Waterside Inn at Bray (UK), the legendary restaurant that has been holding three Michelin stars for 27 years, where he worked beside Michel Roux. After studying at the most important institutions of high cuisine in the world, including l’Ecole Lenôtre, the acclaimed French gastronomic school, he continued his career at the restaurant of London’s Grosvenor House and at the three-Michelin-star restaurant of chef Matin Berastegui in San Sebastian in Spain. Since October 2010, Fabio Ciervo has guided the brigade of the restaurant of the Hotel Eden.
