Concession Stand Manual
Thank you for taking time out of your day to work in the concession stand. We use all
the money generated to keep everyone's hockey expenses down.
First of all, if you have any trouble, please call:

Workers:
If your scheduled co-worker or worker assigned to come into relieve you does not
show up, please call Michelle Larson 320-699-0332 and let her know because a $75
fine is charged to no-shows. We will do my best to find someone to relieve you.
If you are scheduled to work during a Mite Practice Wed. PM / Sat. AM:
Please note you DO NOT need to make popcorn or hotdogs. This is the only LDC
“practice time” the concession stand is open. We open for mites related to the large
number of parents that stay to watch.
If you are the first worker of the day, the door code would have been e-mailed to you.
The door code button panel is on the outside of the door and the top button is 1, and
goes down to 5. So if the door code is 531, you push the bottom button, the middle
button and top button and turn the lever and push on the door.
Bring the garbage can inside the concession stand that is outside the door. Sign in on
the worker sign in sheet.
There is a key on top of the pop machine to open the stock room door. Make a pot of
coffee and you are ready to go for the day.
If you have slow periods you can stock merchandise, sweep up the floor, tidy things
up or just sit down and relax. We are busy hockey parents...we have to take those
opportunities when they present themselves!
The following are some quick instructions for each item's we use in the concession
stand, so please read through this manual and make yourself familiar with everything.
It may seem like a lot to learn, but it really is all pretty simple and will become second
nature after you have worked in here a time or two!
If you need help with something, holler out to anyone wearing green and they will
probably know how to help you.

CASH REGISTER 101
Make sure the key on the upper left side of the machine is always set to 'REG2"
To open the cash drawer if you need to break money, gave incorrect change, etc,
simply press the #/ST/NS button near the bottom right corner.
If the register has an error and beeps, press the "CLEAR" button.
All buttons are marked with the correct price per item.
RINGING A SALE:
If someone orders a Coffee, Hot Chocolate and a Kit Kat, you press the coffee button
once, the hot choc/cap button once and the candy button once, then press "Subtotal
w/Tax key and the sales total with come up saying $4.25. The customer gives you a
$5.00 dollar bill, so you enter 500 with the round number keys and hit "Amount Tend
Total" button and the cash drawer will open and display $ .75 for the change. Give
change and close the drawer.
Please try to use the register to ring up the sale and not just use "No sale" to open the
till without ringing up the merchandise. We use the reports from the register to pay
our sales tax and track sales.
If the memory on the machine is getting full, it will make along beep after each sale
and the screen will show a message of EJFULL. If this happens, please call me. If I
cannot be reached, please run an Error Report, instructions on page 6.
COFFEE MAKER
Tum on On/Lower button first, put coffee/filter pouch in the slide out tray, close and
push the start button for a few seconds. The water is automatically discharged to the
correct amount per pot. Do not leave empty pot on the burner as they will crack. Do
not use coffee filter/grounds more than once.

CAPPUCCINO
To dispense the cappuccino, hold a cup under the desired hot drink and hold the
button down until the fill level is about 3/4 from the top. Once you let off the button,
the machine will continue a bit longer to top it off. Give each customer a lid with all hot
beverages.
Please check the fill level of the powder occasionally, and especially after a really busy
rush. To fill the powder you need to open the front door lift the plastic lid on the flavor
you need to fill. Pay close attention to the flavors to avoid mixing. Carefully fill
canister with powder. Replace the top plastic lid and shut the door.
CUP O NOODLES
Open the cup folding the lid back half way. There is a red lever on the coffee machine
that says "Hot Water". Dispense hot water into the cup filling to the line on the inside
of the cup. Close the lid place a spoon on top and hand to the customer.
POPCORN
2 Cups Popcorn
1/2 Cup Oil
2 Teaspoons Salt
Tum on all three buttons on the top of the machine. Put 1/2 cup oil into the kettle and
let heat for 5 minutes then put in 2 Cups popcorn and 2 Teaspoons of salt into the
kettle. Pay close attention to the popcorn machine and when it stops popping, turn the
handle and dump out the kettle. If the kettle is not dumped properly, the popcorn in
the kettle will burn. Turn off the kettle heat and agitator if you are not making another
batch immediately.

Hot Dogs / Buns
IMPORTANT: Always operate this unit with water in the well.
Operation:
Pour water into the well to cover the element by approximately ¼ inch.
(up to the water level mark) Do no overfill well, as this will result in water overflowing,
ALWAYS maintain water in well.
Holding hot food at proper serving temp:
Preheat water in the well by placing the insert with lid into the well.
Set the heat control to the maximum heat setting (10).
Preheat for 20 Minutes.
Place a 1/2 inch of water in the insert container. Microwave hot dogs
for approx. 30 seconds prior to placing in the preheated container.
Maintain maximum heat or turn down heat setting as needed.
(7 for holding hot dogs at proper temp.)
Maintain water level at or near water level mark. Periodically (approx..
every two hours) remove insert holding food and check water level. Add
hot water if needed.
NACHO MACHINE
Press the button to dispense hot nacho cheese. There should always be 2 bags of
cheese in the machine. The 2nd bag is being kept warm for when the main bag runs
out and applying weight/pressure to the main bag so the cheese comes out faster.
If the cheese runs out, replace the bag by taking off the front cover (It just lifts off).
Take out the top bag and then the bag that is empty. Please note how the bag
dispenser is fitted into the machine so you can put the new one back in the same way.
Take the dispense nozzle off the empty bag. Lay the full bag flat, take off the cap and
put the nozzle on the bag. Place the bag back into the machine, put in a 2nd bag of
cheese. Replace the cover.

PRETZELS
Only use the pretzel warmer during high volume games, as it really doesn't keep the
pretzels very warm. If you do use the warmer, please microwave the pretzels until
they are hot and hang them in the warmer.
To cook a frozen pretzel:
Spray it with the water bottle on the "good" side. Put the good side
down in the salt tray. This makes the salt stick to the pretzel and microwaves it for 90
seconds. If they don't want salt, simply omit this step.
*Extra pretzel salt is located in the freezer.

If you get low on quarters, 5's, etc. please take money out of the drawer and go to
McDonald's and they usually have rolls of quarters, etc. that we can buy. If you are in
the concession stand alone, please ask another LDC parent to tend the concession
stand while you run to get change.
Or you can call Amy Larson or Kristi Kuechle they have access to the lock box which
will also have change in it. (phone # on page 1)
Error Report:
If you are unable to reach me you may have to print a report and clear the memory on
the machine. Since we need these reports for tax purposes, be very careful to follow
these instructions carefully :
1. In the drawer on the cash register are several keys, find the one marked "Z" and
put it in the register and turn it to the “Z” position.
2. Make sure there is receipt paper in the machine and press “Amount Tend" key. This
will print a report from the machine.
3. Now press the round number keys "280602" and “Amount Tend" and this will clear
all the history.
4. Put the "Z" key back and replace it with the "REG" key and turn the key to the
"REG2" position.

End of the night closing items:
Break down cash in the register to 30-1's, 8-5's, 4-10's, 3-20’s, put the rest of
the money in an envelope and drop it in the metal lock box in the back room.
Do dishes and leave them to dry in the rack by the sink:
drink pans for cappuccino machine, coffee pots, measuring cups and spoons
for popcorn, tongs for hot dogs etc…
Wipe down counters and wipe out microwave.
Stock: Pop, Water, Gatorade, Choc. Milk in cooler, fill cappuccino machine,
stock chips in the chip clips.
Empty any popcorn remaining in the popcorn machine and dump in the trash.
Turn off all equipment: coffee machine, hot dog warmer, pretzel warmer
popcorn machine
Pull down the window "garage door" and lock with "U" bolts
Put the garbage can outside the concession door for the arena workers to
empty at night.
Lock the back room door with the key that is on top of the pop machine.
Remember to put the key back on top of the machine.
Sweep the floor
Lock door on your way out by simply turning the lever. Confirm the door
Locked.
