I know we all have summer plans and I hope to hear about them at the May Meeting. Kathy and Ruth are finalizing their plans for the 84th DKG Convention in Austin and will be begging for more of us to go with them. I have a family reunion that weekend and have been told sternly that I will be attending the reunion. They can take care of all of the president’s duties at the convention. I’ll be working with Bill taking sports pictures on and off during the summer, and, of course, getting my inservice hours. By the way, going to convention May Meeting seminars can be counted for your CPE credits, too. May 20, 2013 You really should think about going – it’s not too expensive when you share the room and you learn so 5:30 very much! Café RicoProject 2013 Unifying The Texas State Organization is partnering with Hands On Central Texas to gather school supplies for early childhood and middle school students in Central Texas as the Unifying Project for 2013. Hands On Central Texas is a program of United Way for Greater Austin whose focus is to strengthen communities through meaningful volunteer action. Specific supplies are being requested by the recipient organizations. These include bilingual board books, washable markers, safety scissors, construction paper, school glue, kid friendly or classical music CDs, calculators, #2 pencils, map pencils, pens, white board markers and timer/stop watches. Please call Kathy or Judy if you could send some of these items. Minutes of the April Meeting The May meeting of the Beta Upsilon Chapter of the Delta Kappa Gamma Society, International was held at Meaghann’s Market in Eastland on April 22nd, 2013. Guests included Carolyn Waller and Ann King from Albany. Master Gardener Kathy Leonard gave a wonderful program on all sorts of spring planting, including what plants are appropriate for container gardens. Ms Leonard then let members choose plants to take home, with Kathy Glidewell winning the beautiful large glazed pot and several plants. Ms Leonard and her husband will be our guests at Café Rico in May. Many members then went to Pulido’s for dinner. Members present were Judy, Donna, Mary, Wynelle, Lois, Betty, Lindsey, Karen, Davene, Ruth, Jeanie and Kathy. Turkey sausage and sauteed mushrooms keep them light and savory. Small and satisfying, they’re also a good finger food for your next party. photographer: Ken Burris Total Time: 1 hour Ingredients 8 ounces turkey breakfast sausage, removed from casing and crumbled into small pieces 1 teaspoon extra-virgin olive oil 5 eggs 8 ounces mushrooms, sliced 3 egg whites 1/4 cup sliced scallions 1 cup 1 % milk 1/4 cup shredded Swiss cheese 1 teaspoon freshly ground pepper Directions Individually wrap in plastic and refrigerate for up to 3 days or freeze for up to 1 month. To reheat, remove plastic, wrap in a paper towel and microwave on High for 30 to 60 seconds.1 dozen mini quiches 1. Position rack in center of oven; preheat to 325°F. Coat a nonstick muffin tin generously with cooking spray (see Tip). 2. Heat a large nonstick skillet over medium-high heat. Add sausage and cook until golden brown, 6 to 8 minutes. Transfer to a bowl to cool. Add oil to the pan. Add mushrooms and cook, stirring often, until golden brown, 5 to 7 minutes. Transfer mushrooms to the bowl with the sausage. Let cool for 5 minutes. Stir in scallions, cheese and pepper. 3. Whisk eggs, egg whites and milk in a medium bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of the sausage mixture into each cup. 4. Bake until the tops are just beginning to brown, 25 minutes. Let cool on a wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack. Turn upright and let cool completely.
