ENVIRONMENTALLY PREFERABLE PURCHASING POLICY - Restaurant
We are committed to environmental excellence and pollution prevention through continual improvement and
meeting or exceeding all environmental regulatory requirements. This Policy is adopted as a requirement of
Bay Area Green Business Certification and to conserve natural resources, minimize environmental impacts,
reduce hazards to workers and our community and reduce materials to the landfill. The goal of this policy is to
ensure that the foods, beverages and services we provide, purchase or contract for adhere to our
commitment to lessen the environmental impact of our Restaurant/Café operations. Employees shall be
informed of the company’s environmental policy and will be provided with resources and support that reduce
waste and pollution and conserve water and energy.
We will strive, where feasible, to purchase environmentally preferable products and services to meet our
office and operational needs. We will also favor suppliers who provide environmentally preferable products,
and who can document their supply-chains. By sending a clear signal to producers and suppliers about this
commitment, we hope to support wider adoption of environmentally preferable products and practices.
This policy is designed to address the major areas in which we have an environmental impact, specifically:
1. Office Maintenance, Management and Purchasing Practices
2. Restaurant and Kitchen operations
1. General Office, Management and Purchasing Practices purchasing decisions
 use office supplies and packaging that are reusable and/or durable (paper, toner cartridges, packaging,
etc.)
 practice office energy efficiency (lighting, computers/monitors/printers/etc.)
 choose products that contain the highest available percentage of post-consumer recycled content
(restroom and office paper supplies)
2. Restaurant and Kitchen Operations
 reduce transportation and chemical impacts by offering food that is organic, fair trade, locally grown,
or otherwise sustainable
 use paper products such as to-go containers, napkins, menus, coasters that contain the highest
available percentage of post-consumer recycled content
 Pest control services that minimize use of chemical pesticides in favor of pest prevention (EcoWise
certified or use Integrated Pest Management)
 use of low-toxic, non-aerosol cleaning supplies such as those that are SF Approved
(www.sfapproved.org), Green Seal certified (www.greenseal.org) Design for the Environment or
EcoLogo certified, or that receive at least an 8.1 rating on the GoodGuide (www.goodguide.com).
 use of fixtures and appliances that are energy efficient and conserve water
Examples include:
 installing the most energy efficient lights available and using dimmers
 use of Energy Star appliances and refrigerators
 using water-efficient dish rinse nozzles, dishwashers and toilets
