Brownies
2 (1 oz.) squares unsweetened chocolate
2 Tbsp. butter
1 c. sugar
2 eggs
1 tsp. vanilla
3/4 c. flour
1/2 tsp. baking powder
Dash salt
1. Micro-cook chocolate in bowl uncovered on HIGH for 2 to 3 ½ minutes until melted. Add butter, micro-cook
until melted, 1 to 2 minutes.
2. Beat in sugar, eggs, and vanilla until smooth.
3. Stir in flour, baking powder, and salt. Spread in 8-inch square glass dish.
4. Micro-cook uncovered on HIGH for 5 minutes, rotating ½ turn at once. Brownies will look firm but still
damp on top.
5. Cool and cut into squares.
Pizza Casserole
1 lb. hamburger
1 6oz. can tomato paste
1 large can tomato pieces
3oz. pepperoni, chopped
1/2 tsp. salt
1 dash garlic powder
1/2 tsp. dried oregano leaves, crushed
1/2 tsp. dried basil leaves, crushed
1 dash pepper
1 c. water
1 c. uncooked noodles
1 c. shredded mozzarella cheese
1/4 c. grated Parmesan cheese
1. Brown hamburger by placing it in a colander over another bowl.
2. Micro-cook on HIGH for 3 minutes. Break up meat with a fork.
3. Micro-cook on HIGH for another 3 minutes until the meat has changed color from red to brown. Stir again
with fork. If there is still some uncooked meat, micro-cook for a few seconds on HIGH until cooked thoroughly.
4. Put hamburger into 4 quart casserole dish. Discard grease.
5. Add all other ingredients to hamburger, except cheese. Cover with lid or vented plastic wrap.
6. Micro-cook on HIGH for 20 minutes, stirring every 5 minutes. If noodles are not tender, cook for additional 2
to 3 minutes until cooked. Stir well.
7. Sprinkle cheese on top of mixture and cook on HIGH for 2 minutes until cheese is melted.
MICROWAVE RECIPES
Microwave Chicken Chili
1 lb. chicken breast
1 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
1 16oz. can tomatoes, undrained and chopped
1 8oz. can tomato sauce
1 16oz. can kidney beans, undrained
2 tsp. chili powder
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. white pepper
1. Place chicken in microwave safe casserole dish. Cook on high power for approximately 6 to 8 minutes. Cut
chicken into small, bite size pieces.
2. Place chicken, onion, green pepper, and garlic in 3 quart casserole. Microwave on high for 4 to 5 minutes, until
chicken is no longer pink and vegetables are tender. Stir halfway through cooking time. Drain off any excess fat.
3. Stir in remaining ingredients. Microwave on high for 25-30 minutes, or until heated through. Stir after cooking.
Applesauce Cake
For cake:
1 c. flour
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1 pinch ground cloves
1/3 c. butter
2/3 c. packed brown sugar
1 egg
¾ c. applesauce
For topping:
1/4 c. brown sugar
1 1/2 tsp. cornstarch
3 Tbsp. milk
1 Tbsp. butter
1/4 c. crushed granola
1. Grease the bottom of an 8 1/2 inch round baking dish and line with wax paper.
2. In large bowl, mix flour, baking powder, cinnamon, baking soda, salt, nutmeg, and cloves.
3. In the Kitchen-Aid mixing bowl, beat 1/3 c. butter for 30 seconds. Add 2/3 cup brown sugar. Beat until fluffy.
Add egg. Beat well. Add flour mixture and applesauce alternately to beaten mixture. Beat until combined. Spread
evenly in prepared dish.
4. Cook, uncovered, on 50% power (medium) for 10 minutes, giving the dish a quarter-turn every 3 minutes. If not
done, cook on 100% power (high) for 30 seconds to 2 minutes or until the surface is nearly dry. Cool on wire rack
for 5 minutes. Loosen, then invert onto the wire rack. Remove the waxed paper. Cool thoroughly.
5. For topping, in a 2 cup liquid measuring cup, combine 1/4 cup brown sugar and cornstarch. Stir in milk. Add 1
Tbsp. butter. Cook, uncovered, on high for 1 1/2 to 2 1/2 minutes until bubbly. Stir after 1 minute, then every 30
seconds. Place cake on plate, top side up. Spread topping over cake. Sprinkle with granola.
