Bella Vista Neighborhood General Meeting Tuesday, May 19th at 6:30 pm Kidz Life building of the Real Life Church at 2202 Bella Vista Road. Everyone should try to make it to this meeting. Our guest speaker will be Jessie Bond from Clean Energy Works. CEW is the Northwest region’s largest non-profit home performance provider helping homeowners save energy and improve a home’s comfort and value. She will address several issues important to all homeowners in our neighborhood and provide additional information regarding Radon, which was mentioned in the last newsletter. So stop by the neighborhood meeting and get informed. She will speak at 6:30 at the beginning of the meeting. FUEL FOR THOUGHT - I know that there are more than just a couple of garages in the neighborhood sheltering a classic car. For those enthusiasts, keep in mind that there are now two places that I know of where you can get ethanol-free gasoline. The Country Store at 1804 NW 119th St has 92 octane non-ethanol fuel, and closer to our neighborhood, the 76 station at 16313 SE 1st St.at 164th has it too. Whether it be for that treasured automobile or any of your yard or marine engines that don’t like ethanol either. BVNA President Seat is still open! If you’d like to get more involved with your neighborhood, consider the position of Neighborhood President! Maintains BVNA roster of residents, addresses, phone & email contact information. Liaison with City of Vancouver, Office of Neighborhoods and other departments. Recipe for the Backyard Gardner by Cheryl Higgins Last year I had fun experimenting with my Straw Bale Garden, so much so that I am doing it again this year. My zucchini, tomatoes, and cucumbers produced to the point that I was challenged to harvest and use them fast enough. The following soup recipe, direct from the Bella Vista Test Kitchen (my house), will help me with the tomatoes and cucumbers, at least. Cucumber, Tomato and Avocado Soup: ¼ cup butter Salt & Pepper 1 cup chopped onions 4 cups chicken broth ¼ cup flour 1 ripe avocado 4 cups peeled, cubed, fresh tomatoes 1 cup heavy cream 4 cups peeled, cubed cucumbers Melt the butter in a large saucepan and add the onions. Cook, stirring until wilted. Sprinkle over the flour. Add the tomatoes, stirring with a whisk. Add the cucumbers, and salt and pepper to taste. When blended, stir in the broth. Bring to a boil and simmer for 25 minutes. Working in batches, process the soup in a blender or food processor until smooth and return to the pan. Or you can use an immersion blender in the cooking pot and save a step. Heat thoroughly, then add the peeled, seeded and chopped avocado and whisk rapidly. Stir in the cream, adjust the seasoning, and enjoy. Really yummy with a little parmesan on top and a crusty baguette.
