Dishwasher Temperature/ Sanitizer Concentration Log
This log can be used for mechanical dishwashers or manual three compartment sinks.
Mechanical dishwashers must have a final rinse temperature of 165°F or above for stationary
racks and 180°F or above for all other machines. Sanitizer concentration for chlorine must be a
minimum of 50 ppm and for quaternary ammonium must be a minimum of 200 ppm.
