He worked under Fredric Souty in the 2AA Rosette Kee’s Hotel in Ballybofey. Aged 22 he captained the Northern Ireland Culinary Team and was Gold Medal & Class Winner at The Open British Championships at the Hotel Olympia Exhibition. In February 2003 Shaun joined The Oarsman as Head Chef . Shaun was shortlisted to the Top 6 Chefs in the National Moreau Chablis Fish Dish Awards 2005. In September 2009 he was a finalist in BBC’s Masterchef: The Professionals. He has played an instrumental part in helping us acquire & attain recognition locally & nationally.
