A. Content Standards
The learner demonstrates an understanding of the core concepts in bread and pastry production. *THURSDAY 1:00-5:00 is LABORATORY DAY (Actual Baking Class)

The learners independently demonstrate core competencies in preparing and producing bakery products.

Competencies/Objectives
LO1: Prepare bakery Products
1. Prepare a variety of bakery products according to standard mixing procedures, formulation, recipes and desires product characteristics
2. Use appropriate equipment according to required bakery products and standard operating procedures
3. Bake bakery products according to techniques and appropriate conditions
4. Select required oven temperature to bake goods in accordance with the desired characteristics, standard recipe specifications.
