Step-by-step Instructions for making Dal Bati:
STEP 1: Prepare the Bati dough:
● In a bowl, mix wheat flour, semolina (optional), ghee, yogurt, baking soda, and
salt.
● Knead the mixture into a stiff dough, adding water as needed.
● Let it rest for 15-20 minutes.
STEP 2. Shape and bake the Bati:
Preheat the oven to 375°F (190°C).
Divide the dough into small portions and shape them into round balls.
Place the batis on a baking sheet and bake for 20-25 minutes, or until they turn golden
brown and crispy.
STEP 3: Prepare the Dal:
● Rinse the split pigeon peas (toor dal) and soak in water for 30 minutes.
● In a pressure cooker, add soaked dal, water, turmeric, and salt. Pressure
cook for 3-4 whistles or until the dal is cooked and soft.
● Heat ghee in a pan, add cumin seeds, asafoetida. Sauté until onions turn
golden brown.
● Add ginger paste, green chili, and chopped tomato. Cook until the tomatoes
are soft.
● Add spices (red chili powder, coriander powder, garam masala) and cook for
a minute.
● Add the cooked dal to the pan and mix well. Cook on low heat for 10-15
minutes, allowing the flavors to meld together.
● Garnish with fresh coriander leaves.
Serving suggestions for Dal Bati
● Serve hot Bati with Dal, ghee, and Churma (a sweet dish made with wheat
flour, ghee, and sugar).
● Can be enjoyed as a complete meal or as part of a festive spread.
Tips for making perfect Dal Bati:
● Ensure the Bati dough is stiff and well-rested for a crispy texture.
● Adjust the spices and the consistency of the dal according to personal
preference.
● Brush the Bati with ghee before baking for a rich flavor.
