What you will need: One pot that can hold 10 litres of water One lemon One large chunk of ginger - about the size of a fist 1/2 cup of honey One cheese grater 3 tablespoons of Turmeric Black pepper (3-4 turns depending on the mill) Instructions: Grate ginger into pot (peel first but don't worry about doing it perfectly - once you boil the ginger the skin will float the surface of the pot and you can skim off later if it bothers you). Fill pot with 10L of water. Bring the pot to a boil, the turn down and let the contents simmer for half an hour with the lid on. Remove lid and add 3 tablespoons of Turmeric, stir, replace lid, and let simmer for a few more minutes. If you want to be a real pro and enhance the antioxidant properties of your tea - add a tablespoon of hot chilli powder, but this is not required. Take the pot off the heat add black pepper and let cool. Once Tea is tepid, add honey and stir. They honey shouldn't be added when the Tea is too hot otherwise it loses a lot of its value. Replace lid and let the contents fully cool. Once fully cool, squeeze lemon into the tea. You may now load the tea into mason jars/sealers. I suggest you don't strain the contents (besides perhaps skimming the ginger root skin off the surface). It's best to load the entire contents (cracked pepper, shredded ginger and all) into the jars. This will continue to strengthen the batch even during storage. Put the jars in the fridge and enjoy at your leisure. I suggest you cut with sparkling water when you serve. When you serve, don't be shy about getting ginger pieces in your drinking glass. Drink the tea and chew the ginger. This is EXCELLENT fibre.
