Almond Biscuit
Ingredients
3 Eggs
105g of Caster Sugar
10g of Plain Flour
1 Handful of Ground Almonds

1. Pre-heat the oven to 160C
2. Line a baking tray
3. Whisk the egg white to soft peaks
4. Gradually add the sugar while
whisking until glossy meringue
5. Sieve in the flour along with the
almonds and fold in
6. Pipe or spoon the mixture onto
the baking tray making 10 biscuits
7. Bake for 20 mins then transfer to a
cooling rack

2 Medium Eggs
200g of Desiccated Coconut
85g of Caster Sugar
300g of Chocolate chips
85g of Glace Cherries

Method
1. Line a 30cm x 20cm brownie tin with baking
parchment
2. Combine the coconut, sugar, 150g chocolate pieces
and glace cherries in a bowl
3. Stir in the eggs
4. Spoon the mixture into the lined tin and spread
evenly
5. Bake for 20 minutes at 160C until set and golden
brown
6. Take out of the oven and allow to reach room
temperature
7. Melt the remaining chocolate and pour over the top
of the mixture spreading evenly
8. Leave to cool in the tin and cut into bars
9. Place in the chiller until set.

1 Earl Grey Tea Bag
150g Plain Flour
A Pinch of Salt
75g Caster Sugar

1. Evenly mix together the flour, loose tea
leaves, pinch of salt, zest of 1 lemon and
sugar
2. Rub together with the margarine until a
breadcrumb consistency
3. Add the juice of the lemon and bring the
mixture together as a dough
4. Roll the dough into a sausage shape 5-7cm
wide then wrap in clingfilm and chill for 30
minutes
5. Unwrap and slice into 1 cm thick discs and
place onto a lined baking tray
6. Bake in a hot oven, 180C/gas 4, for 10-12

down gently to flatten a little
5. Place half a cherry on top of each
