BACKGROUND:
The Technical Education and Skills Development Authority (TESDA)–
Provincial Training Center was built in the year 1996 through the legislative assistance
of Sen. Ernesto Hererra. It is located in Barangay Poblacion, Samboan, Cebu. The
Training Center is strategically situated in the center between 2nd Congressional
District and 7th Congressional District of Cebu which is composed of fifteen (15)
municipalities. It offers Institution-based Technical Vocational Programs in Cookery
NC II, Shielded Metal Arc welding NC II, EIM NC II, Trainer’s Methodology NC II,
Masonry NC II and Organic Agriculture Production NC II, and Mobile Training Program
(MTP) in Cookery NC II and EIM NC II. Furthermore, the Training Center extends its
programs and services in providing community based training and livelihood programs
and technical assistance to the Municipalities of the 2nd and 7th District of Cebu.
COURSE DESCRIPTION:
Community-Based Training (CBT) refers to TVET programs intended to
address the specific needs of the community. These training programs may be
delivered in an informal or formal setting in the community. These are programs
implemented with TESDA assistance.
A community-based training on Food Processing will be conducted at RRCY,
Dumanjug, Cebu. This program is designed to enhance the knowledge and skills in
food processing specifically in making tocino, skinless longanisa, chorizo, siomai, and
vegetable pickles.
Aside from Food Processing, Cake making will be conducted. This program is
designed to acquire or enhance the knowledge and skills in preparing and presenting
various cakes.

TRAINING OBJECTIVE:
This skills training will teach the participants on how to produce meat process
foods specifically Tocino, Longanisa, Choriso and Siomai. Preparation and
presentation of baked goodies will also be taught like baking cakes and cookies as
well as cake decorating. This training program will help the participants who want to
augment and supplement their family income by producing and selling meat processed
foods and baked good and pastries

RED VELVET CUPCAKES
Ingredients:
1 cup of buttermilk - (1 Cup Fresh Milk + 1 T distilled vinegar and rest to 5 minutes
to curdle)
(390g) 3 cups *cake flour
(400g) 2 cups white sugar
(14g) 2 Tbsp unsweetened cocoa powder
(6g) 1 tsp salt
(4g) 1 tsp baking powder
(6g) 1 tsp baking soda
(336g) 1 & 1/2 cup corn oil or vegetable oil or canola oil
(28ml) 1 small bottle of liquid food color
1 tsp vanilla extract
2 large eggs at room temperature
Instructions:
1. Preheat the oven at 165℃ or 325℉.
2. Line 24 cupcake liners on muffin pans.
3. In the bowl of a stand mixer with the paddle attachment (you could also use a
hand mixer), sift the flour, sugar, cocoa powder, baking powder, baking soda and
salt then whisk together (your dry ingredients). Place all the remaining wet
ingredients in the same bowl then beat at low speed for a minute (don’t forget to
scrape the bottom and sides of the bowl) then to medium speed for another 1 minute
and a half.
4. Transfer the batter on cupcake liners to be filled 2/3 full. Bake for 18 to 20
minutes or until a toothpick inserted near the center comes out clean. Allow the
cupcakes to cool completely in the pan.
NOTE: Assembling and/or decorating cupcakes before they’re completely cool is
literally a recipe for disaster. The flavor hasn’t settled and the frosting will melt.
How to make *Cake Flour
In every 1 cup of all-purpose flour, remove the 2 Tbsp from it and replace it with 2
Tbsp of cornflour or cornstarch, mix using a hand whisk then sift 5x

MOIST CHOCOLATE CAKE
2 Cups Flour
2 Cups Sugar
¾ Cup Cocoa powder
2 Teaspoons Baking Soda
1 Teaspoon Baking Powder
2 Eggs (use large eggs)
1 Teaspoon Salt
1 Cup Buttermilk or evaporated milk
1 Cup Vegetable Oil
1 ½ Teaspoons Vanilla Extract
1 Cup Boiling Water
You can use 1 Cup of strong coffee instead of the boiling water. Doing so intensifies
the chocolate flavor. If you're making it for children you might want to stick with the
boiling water.
Preparation
1. Preheat Oven to 300° F
(This is a slow bake chocolate cake recipe.)
2. Shortening to lightly grease and flour the
9 x 13 in. Baking Dish.
(It's a one layer chocolate cake!)
3. Place all the ingredients except the cup of boiling water into a mixing bowl.
4. Mix at medium or medium high speed. After about 1 minute add the 1 cup of
boiling water. Then continue to mix until all ingredients are blended and
smooth.
5. Pour into greased and floured baking dish
6. Bake at 140 degrees Fahrenheit for 40 min or until done (Cupcakes 22 - 23
min. Be sure to use cupcake liners.)
7. Test by sticking cake tester in center or using a toothpick. If it comes out
clean... it's done! If not put it back in the oven for an additional 5 minutes and
then test again.
Allow to cool.
9. Bake in bout 8 to 9 minutes (time depends on your oven). Wait for the largest
crack then remove from the oven and leave on the tray till it cools down.

BUTTER COOKIES”
Ingredients:
2 cups all-purpose flour - 20.00 pesos
1 cup unsalted butter (softened/room temperature) – 50.00
3/4 cup white sugar – 10.00
1/2 tsp salt – 1.00
2 egg yolks at room temperature – 15.00
Estimated ingredients cost = P 96.00
Instructions:
1. Preheat the oven at 175℃ or 350℃.
2. Line your baking sheet with parchment paper.
3. Sift the all-purpose flour then set it aside.
4. In a mixing bowl, using a hand mixer, cream the butter together with the sugar and
salt. Then mix in the egg yolks.
5. Using a spatula or wooded spoon(or hand mixer), mix in the dry ingredients.
6. Fill the piping bag (with Wilton 2D or 1M or any open star tip) with the dough.
7. Pipe out rosettes on the prepared baking sheet.
8. Bake the cookies in the preheated oven for 15-18 minutes.
9. After baking, just leave on the baking sheet for few minutes then place the cookies
in the cooling rack.
10. Store cooled cookies in an air-tight container for up to 5 - 7 days. If they will last
that long!
RED VELVET CRINKLES
Ingredients:
(405g) 3 cups all-purpose flour
(200g) 1 cup white sugar
(28) 4 Tbsp unsweetened cocoa powder
(4g) 1 tsp baking powder
(3g) 1/2 tsp baking soda
(3g) 1/2 tsp salt
(112g) 1/2 cup corn oil or vegetable oil or canola oil
3 large eggs at room temperature
1/2 tsp lemon extract/flavor or lemon zest
1 tsp vanilla
2 Tbsp red food color
1 Tbsp glucose or corn syrup (optional)
*1 cup sifted icing sugar (confectioner's/powdered sugar)

Instructions:
1. Sift all the dry ingredients in a large mixing bowl then mix well.
2. Make a well and put the wet ingredients then mix using hands with oil (with
gloves) till all the ingredients are well incorporated.
3. Triple clingwrap the dough and put it in the freezer for at least 4 hours or
overnight.
4. Preheat the oven at 200℃ or 400℉.
5. Line your baking sheet or tray with parchment paper.
6. Wear gloves and put some oil in your hands.
7. Using 1 measuring Tbsp, scoop the dough and level the top of the measuring
spoon then roll and line on the parchment paper and continue till you fill the whole
baking sheet with rolled dough (at least one-inch space in between)
8. Dip in a bowl of sifted icing sugar and line back into the baking sheet (be generous
that's the secret of beautiful crinkles and be fast or else the dough will absorb the
icing sugar)
9. Bake in bout 8 to 9 minutes (time depends on your oven). Wait for the largest
crack then remove from the oven and leave on the tra

Instructions:
1. In a bowl, Cream the butter, the sifted powdered sugar then
continue mixing until smooth, then set aside.
2. In a separate bowl, smoothen the Cream cheese using a wooden
ladle then add the whipping cream., then whipped until the mixture
can hold a stiff peak.
3. Mix the butter with icing sugar mixture to whipped cream cheese
mixture in 3 parts.
4. Continue whipping until mixture hold a stiff peak.
