Provide Restaurant Service
Welcoming the guest
R: Good evening sir, welcome to Valiant restaurant. I am ________ your receptionist
for this evening. Are we holding any reservation sir?
R: May I have your full name sir? Let me check the reservation list sir
R: Thank you for your patience Mr. Smith, please follow me, this way sir, we prepared
a very nice table for you....
Seating the Guest
R: Would this table will be alright for you sir?
R: Please have a sit.
R: May I lay the napkin on your lap sir?
R: Our Food attendant will be here in a while to attend you, excuse me.
Serving Water
FA: Good evening Mr. Smith. I'm ____ your Food Attendant for this evening. May I
serve you water sir? Would you like to start with an aperitif? We have chilled
sparkling wine and margarita cocktail. Would you like one sir?
FA: Okay no sir. I'll be back to present you the Menu, excuse me.
Presenting the menu
FA: Is everything alright sir? May I present to you our menu and wine list for your
selection?, Okay sir. If you're ready to place your order I will be just at the Waiter's
station and it's my pleasure to serve you, Excuse me.
Taking Food and Beverage Orders
FA: Are you ready to place your order sir? Okay sir. Do you have any food allergens
or any food restrictions? Ok no sir. For your starter sir may I suggest an oyster
Rockefeller it is broiled and topped with rich sauce of butter, parsley, other green
herbs and bread crumbs and it is garnished with fresh lemon wedges. It caused cost
250 pesos per order. Would you like one sir?
FA: For your soup sir would like a clear soup or a cream soup? Okay sir, would you
like to try our creamy mushroom soup topped with savory egg yolk? It is cost 150
pesos per order. Would you like one sir?
FA: How about your salad sir? May I suggest our fresh Green Salad it consists of
variety of green leafy vegetables and garnished with different types of cheese. It is
cost 195 pesos per order. Would you like to try one sir?
FA: And what would you like for your main entrée sir? Okay sir a Medium-rare beef
steak. Is it cost 350 pesos per order sir and to compliment your main course sir may I
suggest a bottle of Carlo Rossi Red wine. Would you like to try it sir? Okay sir a
bottle of Carlo Rossi red wine.
F.A: And for your dessert sir, may I suggest a chocolate cream cake with cherry on
top, would you like to try it sir? It is cost 120 pesos per order. How do you wish to
compliment your dessert sir? Okay sir a cup of black coffee.
F.A: Is there anything else would you like to add on your order sir? Okay, no sir.

orders. Thank you.
At the bar station.
FA: Good evening Mr. Bar tender please prepare a bottle of Carlo Rossi red wine for
table number 3. Thank you.
At the cashier
FA: Good evening Ms. Cashier here's the order of the guest from table number 3.
Kindly prepare the bill. Thank you.
Perform Table Adjustment
F.A: Excuse me sir. (Place the additional cutleries)
FA: I will be right back to serve you your appetizer. Excuse me.
FA: Good evening Mr. Chef. May I have the appetizer for table number 3? Thank you.
(Carry the tray with your left hand put the tray above, shoulder level, all Foods must
be served at the left side of the guest. Drinks/beverage at the right of the guest)
Serving Orders
FA: Good evening again sir, here's your oyster Rockefeller. Enjoy your appetizer sir.
Excuse me.
FA: How's the appetizer sir? That's great. Are you done your dish sir? May I removed
the soiled dishes? Thank you. Excuse me sir I'll be back to serve you your soup.
FA: Mr. Chef , may I have the soup for the guest in table number 3? Thank you.
FA: Excuse me sir. Here's your creamy mushroom soup. Enjoy your soup sir, Excuse
me.
FA: How's the soup sir? Great! May I clear the soiled dish now? Okay sir. Excuse me,
I'll be back to serve you your salad.
FA: Mr. Chef. May I have the salad for table number 3? Thank you.
FA: Sir, here's your fresh green salad. Enjoy your salad sir. Excuse me.
FA: How's your salad sir? That's great. May I clear the soiled dishes now? Excuse me
sir, I'll be back with your main course.
FA: Mr. chef, may I have the medium rare beef steak of the guest in table no. 3
please? Thank you.
FA: Good evening again sir? Is everything alright? May I serve your main entrée
now? Okay sir. If you need anything I am just at the Waiter's station and it's pleasure

Perform table adjustment before presenting the bottle of wine
WA: Excuse me sir. (table adjustment, place the red wine glass, place the tissue on
the monkey dish) Excuse me sir be back to present to you your wine.
( Place the cork screw on your pocket, carry the wine in a right manner)
Wine Presentation
WA: Good evening sir, I am ______. Your Wine attendant for this evening. May I
present to you your Carlo Rossi Red Wine? Carlo Rossi red wine originated in Italy,
and it is made with fresh chosen red fruits, it contains 5% alcohol content with a
good vintage year of 1999. May I open the wine for you sir?
FA: Here's the cork sir for your evaluation. Would you like to try the wine sir? Okay
sir. May I pour the wine for you sir? Okay sir. If you need any assistance I am just at
the bar station and its my pleasure to serve you. Excuse me.
FA: Did you enjoy the main course and your complimentary wine sir? That's great.
May I clear the soiled dishes now? Thank you.
(Remove the show plate as well the salt and pepper shakers; adjust the desert spoon
and fork ; clear also the wine glass, wine bottle etc.)
FA: Excuse me sir. I’ll be back to serve you your dessert.
FA: Mr. Chef, May I have the dessert of table no. 3? Thank you.
FA: Excuse me sir, here's your chocolate cream cake. Enjoy it sir. Excuse me.
FA: Are you done with your dessert sir? May I clear the soiled dishes now? Okay sir.
I will be back to present to you your bill.
Take the bill from the cashierff
FA: Good evening Ms. Cashier. May I have the bill of the guest in table no. 3? Thank
you.
Present the bill
FA: Excuse me sir, may I present to you your bill? Thank you sir, And I received the
exact amount of 2000 pesos. Are you leaving now sir? May I assist you out?
FA: Thank you for dining with us Mr. Smith and we are looking forward for your next
visit. Have a great night ahead sir.
(Bring the payment and bill to the cashier)
(Clear and clean the table including the water goblet and table napkin for the next
guest)
Room Service

RSO: Good morning, room service department. This is Flor speaking. How may I help
you?
RSO: Okay sir. May I know your name and your room number sir? Okay sir you Mr.
James Smith and your room no. is 505.
RSO: What would you like to order sir? Okay sir a set of continental breakfast. Which
do you prefer sir? We have orange, apple, and pineapple juice sir. Okay sir a glass of
orange Juice. Would you like a cup of coffee or tea sir? Okay sir a cup of coffee.
Would you like to add a complimentary fruits sir? Okay sir. Is there anything else you
would like to add sir? Okay no sir.
What time you would like to be served sir? Okay sir you will be served at 8:00 o'
clock in the morning.
And how are you going to settle it sir? Would you like to pay in cash? Or just charge
it to your account? Okay sir you would pay in cash.

You place an order under the name of James Smith and your room no. is 505. You
ordered a set of continental breakfast with a glass of orange juice and a cup of
coffee. You also add complimentary fruits together with your continental breakfast.

bill.

RSA: Good Morning sir. I am Flor your Room Service Attendant. I am here to deliver
your breakfast, a set of continental breakfast with complimentary fruits. A glass of
orange juice and a cup of coffee…. Where would you like me to place it sir? Would
you like me to put it in the table just leave it on tray? Okay sir, leave it on tray.
RSA: Is there anything I can help you with sir? Okay sir, May I present the bill?
Kindly put your signature over your printed name sir. Thank you.
RSA: When would you like me to comeback to clear the soiled dishes sir?
RSA: Okay Mr. Smith I’ll be back after an hour. Enjoy your breakfast sir. Excuse me.
(Bring the bill and payment to the cashier)

RSA: How’s your breakfast sir? That’s great! Is there anything else I can help you
sir? Would you like me to open up the curtain to brighten up your day?
RSA: Okay sir. Are you done with your breakfast sir, may I take this now? Thank you
