What are the food products
that can be produced through
fermentation and can be
marketed at school?
Concept of fermentation
Fermentation is the incomplete breakdown of glucose in limited or no oxygen
condition
It can also be defined as the extraction of energy from carbohydrate in the
absence of oxygen
There are two types of fermentation:
-Alcohol fermentation
-Lactic acid fermentation
Yoghurt fermentation is an example of lactic acid fermentation
Define operationally
The incomplete breakdown of lactose in condition of without oxygen to produce
yogurt

30g Sugar
Produce food products produced through
alcohol/ lactic acid fermentation

Pour the milk
into the poy
Heat the milk
Add water

Stir the mixture
until sugar
dissolve
Add yogurt into
the pot

Pour the
mixture into a
plastic container
Clear the
bubbles on the
top of mixture

a towel to keep it warm

Weakness
- Lack of taste
- Less variety of fruits
- Less attractive decoration
Improvement
- Add more flavour (strawberry,
chocolate, mango etc.)
- Add more fruits
- Use different candy to decorate
(mashmellow,M&M,Gummy Bears
etc.)
