Line drawer with (1) red linen 2. Lay wax paper (from Pantry) ON TOP of linen 3. Place (4) bags of bread in each drawer Set-up Soup Station: Fill up silverware rack with spoons, napkins, wet naps, chopsticks, crackers if needed. Set up bowls. Restock EVERYTHING. ***ASSURE LEMONS ARE COMPLETE*** ● 5 SERVERS: Organize Ewa Sink & Silverware Station ○ Refill water bottles Wipe Window Frames & Wood Counter in front of kitchen, from Ewa to Diamond Head Refill water containers (Black cambro in ocean room & water cooler next to water bottle fridge in middle of the kitchen) ● ● Restock the following condiments in Lanai Makai POS Station with FULL CONTAINERS: ○ (2) Tabasco (2) Malt Vinegar ○ (2) Sets of S&P (2) Sriracha ○ (2) Shoyu (2) Yellow Mustard ○ (1) Pepper mill (1) Worcestershire ○ (1) A1 Balance tables do as many as you can until all are done ****MONDAY & SATURDAY: Dust glass balls & Windex dining room mirrors ****FRIDAY: Dust all lava tube pictures ● ● Refill All S&P Fill clean water bottles and put away ****WEDNESDAY: Table centerpieces- Refresh water in plants on table and wipe down vases; every other week new plants arrive and will need to trim and replace--see manger ****FRIDAY: Wash and refill flower tiki cups. Run through dish in rotation, refill, and replace with fresh water and “pretty” flowers. Fill water bottles and put away Restock glassware boxes brown and white boxes above silverware station Check with dinner servers for any additional tasks that may need to be complete ****MONDAY: Refill Dining room Pepper’s from being washed out night before ****TUESDAY: Refill Dining room Salt’s from being washed out night before ****THURSDAY: Dust and trim hanging basket plants & Dust blinds that separate kitchen and dining room PM SERVER SIDE WORK (ALL PM SERVERS ARE REQUIRED TO POLISH AND ROLL RED LINEN ROLL-UPS) ***THIS INCLUDES CLOSING SERVERS!! 8 SERVERS OR MORE: <WINE GLASSES: # of rows divide by servers> 7 SERVERS: SECTION 5 OPENING ● ● ● ● ● ● ● 6 ● ● ● ● ● ● 9 30 roll ups 35 roll ups Balance dining room tables, and polish B&Bs (All of Lava Tube including Lanai tables) Wipe chairs, making sure there is no food or bird feces Wipe rail in front of tables (2) Mise en place (“putting in place”): ○ Extra steak knives, butter knives, small and large forks & spoons, chopsticks ○ NO NAPKINS OR WET NAPS ■ Near Ocean room in front of DR Makai POS ■ Between Ewa & Diamond Head POS Straighten kitchen and wooden counter in dining room (between kitchen and DR) Clear lava tube (anything still left after pre-shift) and set ready for service Ensure EVERY Lanai table has a candle base on it (busser will fill with candle light) Balance dining room tables, and polish B&Bs (All of Main DR including Lanai tables) Wipe chairs, making sure there is no food or bird feces Wipe rail in front of tables Check plant vases: freshen/fill up water, replace dead/bad looking plants, there should be one vase to EVERY Dining room table (inside) Place wine buckets throughout dining room, none should be left in doorway during service Scoop butter on sheet pan from prep area with small scoop, place in walk-in for sect. 3 ● ● ● ● ● ● ● Check your section is ready for service (Clean chairs, fresh plants/water, S&P topped off, settings are aligned neatly) ● Stock Server set-up stations in the kitchen (black silverware trays) Wipe chairs, making sure there is no food or bird feces Turn on bread heaters, make sure that water has been added Bring out butter for service ● ● ● ● ● ● ● ● Complete Roll-ups Marry and consolidate condiments under pantry station Fill oil & vinegar Stock condiments, 6 of each Refill pepper mills Wipe stainless shelves Clean out ALL sinks Restock dessert spoons, knives, forks, etc ***SUNDAY: Scrub Diamond Head Soda Machine (Remove all parts and clean, also behind machine) ● ● ● ● Complete Roll-ups Consolidate bread to top two drawers Clean out ALL sinks Scoop full tray of butter ***TUESDAY: Clean shelves under Ewa sink and under soda machine ● ● ● ● ● Complete Roll-ups Clean and organize Ewa Sink Area ○ SCRUB both sinks with CLEANER and steel wool ○ Wipe under silverware station Rotate and restock iced tea bags Bring out coffee cup rack(s) to coffee bar Bread Folds: make sure to refill and organize baskets (1 full pan) Stock Dry Supplies: Straws, coasters, Keiki cups etc. Organize Silverware Station: Fill up silverware rack at pantry with small and large spoons, small forks, and steak knives. Also fill knives in the middle of the kitchen ***WEDNESDAY: Scrub BAREFOOT & Rosé wine bottles--No other white bottles ● ● ● ● ● ● ● 40 roll ups 45 roll ups CLOSING Replenish Iced Tea & Lemons 3 4 6 SERVERS: 5 SERVERS: Complete Roll-ups Place scooped butters into ramekins, enough for 6 trays. (approx. 150 butters) Consolidate bread Wipe down counters and heaters ***Thursday: Wipe down under DH sink and under soda machine and wine glass area Check your section is ready for service (Clean chairs, fresh plants/water, S&P topped off, settings are aligned neatly) Wipe chairs, making sure there is no food or bird feces ● ● ● ● ● ● Complete Roll-ups Brewer: remove spout and clean, wipe out and dry Iced Tea: Fill (2) pitchers, if more than half full, wrap and store in the walk-in, if less than half left, toss it Clean out and wipe fridge--Dressing AND Water fridge Clean Diamond Head Soda Machine and sink area ○ Remove nozzles and clean individually, replace upon completion Clean out all sinks ***Friday: Wash all bread baskets and refill 7 ● ● ● ● Complete Roll-ups Restock sugar caddies Refill 1 rack of water bottles DR POS Stations ○ (3) Rolls of thermal paper ○ Staples ○ Empty trash baskets ○ Wipe down POS stations ○ Wipe check presenters and stand to dry ***Saturday: Wash sugar caddies, dry, and refill 8 ● ● ● ● ● ● Complete Roll-ups Turn off Bread warmers, remove unused bread and place in bread stock Put butters away, assure there are 6 trays left Send butter and ketchup trays through dish pit Wipe down DH counters and restock soup area Refill any leftover water bottles ***Monday: Empty salt shakers and run through dish, set to dry 10 ● ● ● ● ● ● ● Complete Roll-ups ○ Assure 240 roll-ups are complete at the end of the night. Refill and replace with fresh foliage Help with whatever needs to be done Ask closers for duties ***When a section is missing, ALL servers will do the assigned sidework. Closers to assign.
