(2) Stacks of polished B&B plates and (2) Stacks of polished 9” share
plates--polish in back of house BEFORE bringing to floor- not in guest
view.

(2) Rectangle trays of Ketchup ramekins

1. Line drawer with (1) red linen
2. Lay wax paper (from Pantry) ON TOP of linen
3. Place (4) bags of bread in each drawer
Set-up Soup Station: Fill up silverware rack with spoons, napkins, wet naps,
chopsticks, crackers if needed. Set up bowls. Restock EVERYTHING.

refill, and replace with fresh water and “pretty” flowers. (extra foliage in the
events office, see a manager to get more)

Wipe chairs, making sure there is no food or bird feces
Wipe rail in front of tables

Clear lava tube (anything still left after pre-shift) and set ready for service
Ensure EVERY Lanai table has a candle base on it (busser will fill with candle light)
Balance dining room tables, and polish B&Bs (All of Main DR including Lanai tables)
Wipe chairs, making sure there is no food or bird feces
Wipe rail in front of tables
Check plant vases: freshen/fill up water, replace dead/bad looking plants, there should be one vase to EVERY Dining
room table (inside)
Place wine buckets throughout dining room, none should be left in doorway during service
Scoop butter on sheet pan from prep area with small scoop, place in walk-in for sect. 3

Remove nozzles and clean individually, replace upon completion
