EFFECT OF CITRIC ACID ON STORAGE STABILITY OF SUGARCANE

Researcher: (August 2020 – November 2020)
– Teamwork: Coordinated with a team of 4 members to carry out the project.
– Research: Optimized the treatments based on sensory evaluation, turbidity, and color attributes at different
concentrations of potassium.
– Critical thinking: It became clear that the changes in different attributes were significantly (P<0.01) higher at
room temperature as compared to refrigeration temperature.
– Effective Results: The sugarcane juice having citric acid and potassium meta-bisulphite showed minimum
changes in sensory qualities during storage, both at room and refrigeration temperature.
