What is water kefir?
Serves 4 people
Water kefir, or tibicos, is a traditional
fermented drink made by culturing water,
sugar and fruit with a culture containing
beneficial bacteria and that is rich in
Probiotics.
Kefir contains around 30+ Billion cfu of good
probiotics and is quick, easy and cheap to
make. To compared with other sources of
natural probiotics:

Water Kefir
40 35+ billion CFU
Kombucha
50 80+billion CFU
Milk Kefir
61 500+ billion CFU
Ingredients
Tips

Water Kefir Grains
●
4 Cups of Water
●
Cup of Sugar (coconut or rapadura
works best)
●
200ml of Fruit Juice or
Fruit for Flavoring
●

Preparation
●
1. Boil; Bring 1 cup of water to a boil and
dissolve sugar.
●
2. Mix; Add remaining cool water and mix
in your kefir grains, water should be no
more than 30 deg C
3. Sit; Place a loose lid or cheesecloth cover
over your jar and ferment your water
kefir on the countertop or in a cupboard
for 24 to 48 hours. Temperature is best
kept from 20 to 25 deg C
4. Carbonate; Like a little fizz in your life?
Strain your Water Kefir into Pressure
Safe bottles.

Add 200 to 250ml of your
favorite fruit juice
○
Or add a handful of pieces of
fruit, berries or ginger
○
Try ¼ cup of mashed
blueberries with a tablespoon
of pure maple syrup
○
Try 1/4tsp of molasses, 1/4
tsp of cinnamon, 5 cloves, 3
cardamom pods, 5 pieces of
ginger for a festive treat
Seal and allow to carbonate for another
24 hours. Carbonation will occur quicker
at higher temperatures.

Burp your bottles every 8 hours to
ensure they do not explode all over
your kitchen in a fizzy mess.
Try different flavors in your second
ferment, the world is your oyster…
but probably don't try oysters…
Longer first fermentation produces a
tarter drink with less sugar content
Kefir grains are alive, treat them like
family.
Grains can be put to sleep in the
fridge for up to 3 months, just add
clean water and some dried raisins or
similar.
If the kids need a boost, a pinch of
bi-carbonate soda or some dried fruit
can be added to provide nutrients,
rapadura sugar also provides more
nutrients than raw or table.
