Chicken Chow Mein Serves 2 Ingredients 100g Chicken thigh 300g Egg noodles ½ Red pepper 1 Onion, coarsely chopped 3 leaves of Pak choi 3 leaves of choi sum 75g Bean sprouts 2 Spring onions Marinade 1 tbsp Light soy sauce 2 tsp Sesame oil ½ tsp Sugar The Sauce ½ tbsp oyster sauce ½ tbsp light soy ½ tbsp Dark Soy 1 tsp sugar 1 tsp Sesame oil Soak the egg noodles in hot water for 3-5 minutes until softened, separated, but still al-dente Once the noodles have separated, drain the water and allow to dry (place on a clean tea towel to dry) Slice the chicken thigh and mix with the marinade Slice the choi sum, Pak choi, red pepper and into strips, coarsely chop the onion Finely slice the spring onions and place in a small prep bowl Mix all the sauce ingredients in a small bowl Cooking Heat 1 tbsp vegetable oil in a wok to high heat Add red peppers and cook for 1 minute, then add the Pak choi and choi sum and fry for another minute chicken choi sum, pak choi, red pepper and stir -fry for 1-2 minutes Add the bean sprouts and stir-fry for a further 30 seconds Remove veg to a plate Add a little oil, and then the chicken and cook on both sides for a minute Add the noodles and the veg and stir-fry for 30 seconds then add the sauce. 1 minute Stir fry for an extra 2 minutes Add the spring onion and serve
