A. Matching. Read the information below and match each word
in red with its definition.
The Origins of Valentine's Day
Although Valentine's Day may seem like a modern event, its roots go
back over 2,000 years. This day of romance evolved from the Roman
celebration called Lupercalia, which was held every year on February
15. When the emperor Constantine made Christianity the official
religion of the Roman Empire, around A.D. 313, the holiday continued
and was renamed for Saint Valentine.
According to the story, in about A.D. 270, Roman Emperor Claudius II,
seeking to recruit more soldiers for his army, prohibited young men
from marrying. Valentine, it is said, was a priest who performed
marriages in secret despite the ban. For his defiance of the emperor,
Valentine was killed—on February 14, the story goes.
One of the first Valentine's Day cards was sent in 1415 from France's
Duke of Orleans to express his affection for his wife while he was held
prisoner in England. Today, giving your sweetheart a Valentine's Day
card has become the norm for lovers in many countries around the
world.

New Guinea and its surrounding islands are home to 34 species
of birds of paradise. Mountainous New Guinea has habitats at

isolation reduces the flow of genes between populations,
allowing the birds to evolve separately into their wonderful
varieties.

Before You Read
Usually we can't see, smell, or taste the bacteria that make us
sick.
Whether people are getting sicker from food today than they
were 50 years ago is a matter of debate. What is different are
the bacteria. Advances in processing and sanitation in the
developed world have diminished some foodborne threats, but
new hazards come with changes in lifestyle and food
production.
E. coli 0157:H7
First identified as a cause of disease in 1982, £ coli produces a
powerful toxin that can lead to kidney failure. Infections
generally result from eating undercooked ground beef.
Salmonella
Almost any food can carry Salmonella bacteria, but chicken and
eggs are especially high-risk carriers. Infections have leveled
off, yet an emerging variety shows high rates of drug
resistance.
Listeria
Able to survive refrigeration, Listeria is found in many foods,
including soft cheeses and processed meats like hot dogs.
Pregnant women, babies, and people with weakened Immune
system; are most at risk.

A. Definitions. Read the information below and match each
word in red with its definition.
A food contamination scare recently occurred in the United
States involving one of the country's most beloved foods—the
peanut. In late 2008 to early 2009, nine people died and almost
700 people nationwide were reported to have been affected by
salmonella poisoning. However, the real number of victims was
likely to be much higher. The U.S. Center for Disease Control
estimates that for every reported case of salmonella, 38 cases
go unreported.
The cause of the salmonella was found to be peanut products.
Peanuts are used in a wide variety of products and are an
integral part of health bars, cookies, ice cream varieties, and
even dog biscuits. Although the Food and Drug Administration
(FDA) does not have the authority to order a compulsory recall,
stores across the country voluntarily removed peanuts and
peanut products from store shelves.
Using DNA technology, the FDA traced the exact variety of
salmonella back to a company called Peanut Company of
America, which was likely not diligent enough in its testing and
cleanliness. The company has since gone out of business.

Before modern Homo sapiens migrated out of Africa perhaps 60,000
years ago, scientists tell us that another group, Neanderthals, had
occupied Europe and Asia for maybe 200,000 years. Although there
were probably no more than 15,000 of them at their population's
peak, groups of Neanderthals were 1. 1.----- over a(n) 2. 2.----- area
throughout Europe, into the Middle East, and even as far east as
Mongolia. In 1856, the first Neanderthal bones were found 3. 3.----- in
Germany's Neander Valley by workers digging for stones. These thick
bones indicated that Neanderthals were shorter than modern humans,
but physically stronger. Their tools were rough and simple, and not as
4. 4.----- as those of later Homo sapiens. Additionally, their food was
not as varied; the 5. 5.----- of their diet was the meat of large and
medium-sized animals. At some point after modern humans entered
Europe and Asia, the Neanderthals 6. 6.----- from Earth. The reason
for their disappearance remains a mystery There are, however, a
number of theories. As modern Homo sapiens 7. 7.----- their lands,
they may have killed the Neanderthals off. Other possible causes
include diseases introduced by the newcomers, or climate change.
Another theory was that the Neanderthals had children with Homo
sapiens, and gradually became part of their group. However, 1997
DNA analysis by geneticist Svante Paabo and his colleagues at the
University of Munich determined that Neanderthal DNA is not included
in the DNA of modern humans. This is rather convincing 8. 8.----- that
the majority of Neanderthals probably died out, and people alive today
are not their 9. 9.-----.

The illustration above pictures some of history's most amazing ocean
navigators, the early Polynesians. Anthropologists believe that the
Polynesians are descendants of an earlier group of Pacific Ocean
explorers called the Lapita. Together, in canoes perhaps similar to the
one shown above, they expanded their world to include nearly every
island in the Pacific Ocean, landed in New Zealand, South America,
and may even have gone to North America.
Where did these brave adventurers come from? What drove them
again and again to sail their canoes over the horizon in search of new
lands? How did they accomplish such amazing feats of navigation,
finding and colonizing hundreds of distant islands scattered across an
ocean that covers nearly a third of the earth?

Ten years ago, most experts would have agreed that the first people
in the Americas arrived about 14,000 years ago by walking across a
land bridge that crossed the Bering Strait—the 1. 1.----- between
Siberia and Alaska. They then traveled south through an open area of
ground between great sheets of ice that 2. 2.----- across North
America at that time. Today, however, this theory is being challenged.
An alternative theory suggests that instead of a single first migration,
various groups of people came to the Americas at 3. 3.----- spaced
well apart in time. Another theory proposes that, rather than walking
across a land bridge, some came by boat. According to this theory,
ancient people might have kayaked their way along the shoreline just
as adventurous tourists do today.
Looking at ancient tools found in America, archeologist Dennis
Stanford noticed that their shape is 4. 4.----- to tools used by the
Solutrean culture of southwestern Europe. He thinks it is 5. 5.----that people of that culture may have kayaked across the Atlantic from
Europe to America perhaps 20,000 years ago or earlier.
The science of archeology often produces theories that are based on
very small bits of evidence. Today's archeologists know that being 6.
6.----- and holding on to one theory while shutting out the others isn't
good science. They know they need to be patient as more buried
pieces of the puzzle are dug out of the ground. As new evidence is

In recent years, Chinese films have had growing success in 1. 1.----markets, and, in 2000, the film Crouching Tiger, Hidden Dragon achieved

The 4. 4.----- of a wuxia story might begin with a young man suffering a

A 3,400-year-old image of a person dancing—discovered in the Middle
East—is proof that we, the 1. 1.----- of Earth, have been dancing for a

dance, dancing is a part of our lives. Just the beat of our own heart
can provide the 2. 2.----- for dancing, or we can dance to the sounds
of a full orchestra. So, what is this thing called dance? According to
Judith Jamison, a skilled 3. 3.----- of the art of the dance and artistic
director of the Alvin Ailey American Dance Theater, "It is as close to
God as you are going to get without words."
When we dance, we express love, hate, joy, and sorrow. We celebrate
birth, death, and everything in between. We dance not only for serious

"I remember a couple," says Lester Hillier, owner of a dance studio in
Davenport, Iowa. "One of their sons had been killed. The 7. 7.----parents had a dance lesson scheduled the day after it happened. They
insisted on coming anyway." They practiced the steps they'd learned.
As the hour passed, the couple asked for one last dance. And when it
ended, the wife rested her head on her husband's chest; he wrapped
his arms around her shoulders. "If we just sat at home, what would
we do?" he said quietly.

Fugu, or puffer fish, is a delicacy in Japan, but it can also be deadly.
The skin, liver, and other internal parts of the fish contain
tetrodotoxin, a powerful toxin that causes nerves to 1. 1.----functioning properly. You might think that this is a(n) 2. 2.----- reason
to stay away from this dangerous food, but fugu is in fact quite
popular. In 1975, the famous Japanese kabuki actor Mitsugoro Bando,
who enjoyed the pleasant feeling it created on his tongue and lips,
spent a night feasting on fugu liver. Unfortunately for him, this time,
the feeling was followed by classic 3. 3.----- of fugu poisoning:
inability to move his arms and legs, difficulty breathing, then, eight
hours later, death. There is no cure for fugu poisoning. For this
reason, fugu chefs are strictly trained and must be licensed; of the
900 who took the 2008 exam, only 63 percent passed. Additionally,
Japan has forbidden the public sale of fugu liver since 1983.
The source of the fugu's poison is a subject of 4. 4.-----. While some
believe that fugu produce their own poison, Tamao Noguchi, a
researcher at Nagasaki University, believes that the poison comes
from the small animals that the fish eat. In experiments, Noguchi has
raised fugu in a laboratory, controlled their diet, and produced toxinfree fish. Noguchi is a(n) 5. 5.----- of lifting the ban on fugu liver, and
hopes his research will help. "A great delicacy; once you eat, you

The illustrated map above depicts the world at the time of Genghis
Khan, the great military leader of the Mongols. In 1206, when he

Ivan Vasilyerich was the first tsar of Russia. His Russian nickname,

accomplishments for Russia. In 1533, when Ivan was three years old,
his father died, making Ivan the official Grand Prince of Moscow.
However, his mother actually ruled Russia until her death when Ivan
was only eight. At that time, members of the Russian nobility ruled
the country, and while they treated Ivan with respect in public, they

The Large Hadron Collider (LHC) may help scientists to treat diseases,

According to Andy Parker, physics professor at Cambridge University,
proton beams similar to those used in the LHC can destroy cancer
tumors deep inside bodies. "What you can do there is send a beam of
protons into the patient, which does essentially no damage at all . . .

The 174 colored dots in these images of Earth are places where
meteorites have struck our planet and left a crater as evidence.
These craters vary in diameter from less than 8 kilometers (5 miles)
across to over 160 kilometers (100 miles) across. The largest craters
mean that the meteorite that hit the Earth must have caused a
catastrophe that changed the land, climate, and life of our planet.
Today, astronomers are scanning the sky trying to find the next
object on a collision course with our planet, in hopes of giving us the

A Stressful Future
Between 1995 and 2025, a billion more people will join those already
living under a high level of water stress. Add the people who face a
medium level of water stress, and four billion people- half the planet's
population—will have an insufficient supply of water.
A Thirstier World
Because of irrigated agriculture, the industrial revolution, and a
population explosion, humans use 45 times as much water as they did
three centuries ago. Irrigation, which accounts for 70 percent of water
use, grows 40 percent of the world's food and makes it possible to

Reports indicate that rising global water consumption rates, poor
water management, and increased global temperatures could mean
that our children and grandchildren will 1. 1.----- a world in which two
out of every three people in the world are affected by water
shortages. By the year 2025, the world population will 2. 2.----- 8
billion, 3 billion of whom could, according to the World Resources
Institute, face chronic water shortages.
Some scientists say that success or failure will depend on whether
people can 3. 3.----- the seriousness of the situation and take action
to use less water. One problem is that when water is cheap, people
don't see the need to conserve. The European Environment Agency
found, for example, that 75 percent of the water that households in
Albania pay for is wasted because of 4. 4.----- in their pipes.
If water becomes more expensive, people might be 5. 5.----- to use
water more efficiently. For example, during the 1993 droughts, an
average farmer in California paid about ten cents a ton for water,
compared to three cents a ton after rain had 6. 6.----- the supply. At
ten cents, many farmers in California started growing crops that
require less water. When the price of water was raised in Chile, the
average amount of water 7. 7.----- for use in irrigation decreased by
nearly 26 percent.
One notable success story is the Working for Water program in South
Africa. In the past, water was priced at a similar rate for all users.
However, the program has changed the way individuals are charged
for water, instituting a system 8. 8.----- people who conserve water
pay less. Their new system is an important example for a world in
which, as the population continues to grow, water becomes more
important every day.

The Trouble with E-Waste
Thousands of tons (2005) Percent recycled TVs, personal computers,
and other electronics contain parts that pose no danger in daily use
but become toxic without proper disposal. This electronics waste (or
e-waste) contains dangerous substances such as:
Lead A toxin that can harm the nerves, kidneys, and reproductive
system.
PVC A plastic material used to make cases for electronic goods. When
burned, it releases toxic chemicals called dioxins that can cause
cancer.
Mercury The only metal that is liquid at normal temperatures.
Mercury has been linked to brain and kidney damage.

Vocabulary Practice
A. Matching. Read the information below and match each word in red
with its definition.
Food is necessary for all living things. The body requires good
nutrition to function well. Therefore, it seems quite ironic that
starving animals that eat barely enough to survive are the ones who
live the longest. For more than 70 years, scientists have known that
animals such as dogs and mice show increased longevity with
decreased food intake. In other words, mice fed 40 percent fewer
calories than what is considered to be a healthy diet will live, on
average, 40 percent longer than mice fed normal diets.
Could eating less food be a useful guideline to help slow the aging
process in humans as well? Donald Ingram at the National Institute of
Aging investigates the effects of a lean diet (which is 30 percent
reduced in calories) on monkeys. It's too soon to tell if the animals will
live longer; the study began in 1987, and the monkeys typically live
for 40 years, but so far, the animals do seem to be somewhat
healthier. "But we just don't know enough yet about how much longer
large animals might live on a calorie-restricted diet," Ingram said.
