EASY COOKING! With Jon and Jeanne WHO IS HERE TODAY? We will take everyone’s name so that we can send this presentation to you after the session. SHORTBREAD BISCUITS These are the easiest biscuits in the world! Remember the 1, 2, 3 of cooking 1. Get me and the kitchen CLEAN 2. Get all the ingredients and tools READY (don’t forget to measure!) 3. Read all the instructions first if you need to … and then go on and COOK! SHORTBREAD BISCUITS - INGREDIENTS - 2 cups of plain flour (270g) 1 cup of butter (225g) 0.5 cups of sugar (brown if you can, it’s tastier) Pinch of salt (if your butter is unsalted) 1 teaspoon (tspn) of cinnamon (if you like that - we do!) You can put anything you want on top of the biscuits, but we like it with cinnamon sugar: - 2 tspn cinnamon 0.5 cup of sugar SHORTBREAD BISCUITS - TOOLS - Measuring cup Teaspoon for measuring Two big bowls One strong wooden spoon or spatula One small bowl to mix the cinnamon sugar Oven tray to bake your biscuits (metal) Baking paper (but don’t worry if you don’t have any) WHAT IS A CUP IN COOKING? A cup is 250ml in volume. If you have a measuring jug, you can use that. But did you know that you can use ANY cup or glass to measure with this neat trick? 1. 250ml is about the size of one of the very small bottles of water (check the bottle) 2. Empty a full small bottle of water into a cup or glass. 3. Make a mark on the outside of the cup to show where the water comes up to. 4. You now have a 1 cup measurement! Watch T. Jeanne making a measuring cup! SHORTBREAD BISCUITS - RECIPE 1. Soften the butter - leave it out of the fridge for a while, or give it a very quick blast in a microwave if you have one (10 seconds at a time ONLY!) If you don’t have butter but you have a nice oil, like coconut oil, you can use that instead: 1 cup butter = 0.5 cups oil PLUS four tablespoons (tablespoons are the big spoons!) SHORTBREAD BISCUITS - RECIPE 2. In a big bowl, mix the flour, salt and cinnamon. 3. In the other big bowl, mix the soft butter and sugar together until they make a nice smooth mix. You can use a blender for this if you want, but it’s easy if the butter is soft. SHORTBREAD BISCUITS - RECIPE 4. Now add the flour mix to the sugar and butter, and stir with the spoon until it is all smooth and can be made into a ball with your CLEAN hands. 5. When it is mixed together into a ball, put a tiny bit of flour onto the CLEAN counter in your kitchen. Take the ball out of the bowl, put the ball on the counter and split it into two smaller balls. SHORTBREAD BISCUITS - RECIPE 6. Roll your balls of biscuit mix into one or two log shapes, so that they look like this; 7. Wrap your rolls in something like a cloth or film wrap, and put into the fridge to chill for 30-60 minutes. HEALTHY SALAD So, your biscuits will be ready to eat soon … time to make a nice healthy salad for your main course! The trick with salad is that you can put ANYTHING YOU WANT in - so go and dig in the fridge and see what you have! HEALTHY SALAD - 1, 2, 3 1. Get me and the kitchen CLEAN 1. HEALTHY SALAD - INGREDIENTS Any mix you like of; - Vegetables that you can eat raw: I like tomatoes, cucumber, lettuce, carrots, bean sprouts ...but anything that you don’t need to cook is good. - Meat: bits of cold meat can be tasty, and give you extra protein - Cheese: cubes of cheese or grated cheese are both yummy! HEALTHY SALAD - TOOLS - A big bowl for the salad - A chopping board (don’t use the one that you use for meat!) - A small knife: NOT TOO SHARP! - A grater? If you want to grate carrot, cheese etc HEALTHY SALAD - HOW TO CUT SAFELY How you cut depends on the shape of your vegetable. Long and thin? CLAW METHOD Round? BRIDGE METHOD HEALTHY SALAD - SALAD DRESSING I don’t know why the sauce for a salad is called a salad dressing, but it does make a salad sooooo much more interesting! HEALTHY SALAD - SALAD DRESSING A basic salad dressing is; - 5 spoons of yummy oil (olive oil works best, or a nut oil) - 1 spoon of vinegar or lemon juice - Salt and pepper Mix in a jam jar, and you’re ready! You can also try with: - Oil, mustard and honey - Oil, balsamic vinegar and garlic - Or try something else! SHORTBREAD BISCUITS - RECIPE 8. Put the oven on to heat up - medium hot, so 160 C or gas mark 4 9. Now just take the logs of biscuit mix out of the fridge and slice the biscuits off, like this: Make the biscuits about 0.5cm, although they are nice a bit thicker as well. SHORTBREAD BISCUITS - RECIPE 10. Mix the sugar and cinnamon in a small bowl, and dip each biscuit in the bowl so that it has a little cinnamon sugar on it. 11. Get your cooking tray ready cover it in baking paper if you have some, or else smear some butter or oil all over the tray. This stops the biscuits from sticking. SHORTBREAD BISCUITS - RECIPE 11. Cook in the hot oven for about 13 minutes - check after 10 minutes though. When they are starting to go brown, they are ready!
