How was the beverage service industry developed?

The beginning or development of the hospitality industry in general, and the
beverage service industry in particular, can be dated back to Sumerian times,
according to records. Although some civilizations coexisted with the
Sumerians in other areas, the Sumerians were able to chronicle their culture
in writing. They were also regarded as the most progressive bunch of people
at the time.

1. Beverage Service Industry
- Is an industry comprising of establishments or businesses that offer
primarily beverages, foods and sometimes entertainment and other services
2. Bar
- Are establishment or businesses that primarily offer beverages, foods and
sometimes entertainment and other services to its customers.
3. Taverns
- Term for bar during the Sumerian times. These were place serving beverage
particularly ‘’ale’’ and places for social gathering. This is a place for the poor.
4. Speakeasies
- It is place to sell illegal liquors.
5. Moonshines
- Is the term used for illegal liquors (alcoholic beverages were produced
during night time when the moon was shining).
6. Bootleggers
- These are illegal supplier of the illegal liquor.
7. Lesches
- An establishment serving fine food and drinks.
8. Beverage
- Came from the word ‘’bibare’’ which means to drink
9. Cabaret’
- A restaurant with a stage for performances and the audiences sitting around
the table often during or drinking watching the performance.
10. Saloon
- An unsavoury place of prostitution, gambling and other illegal activities such
as drug trafficking and gang wars.

II. Answer what is asked below:
1. How was tavern during the Sumerian times?
During the Sumerian times, some of them produced more ale not only for
themselves, but also for others who could not produce their own and this led to
the establishment of the ancestors of today’s bar, the tavern which means this
were places serving beverage particularly ‘’ale’’ and places for social gatherings
and it was derived from Latin term taberna and from the Greek word taverna,
whose original meaning was a shed or workshop.
Taverns have been around in England since the 13th century, and they
were frequently dominated by women known as "ale-wives." In England, the
word tavern had evolved, from tavern to public house (pub) by the 19th century.
2. What was the impact of prohibition law in the American beverage service
industry?
- When the Prohibition Law, also known as the 18th Amendment Law was
implemented, it had a significant impact on the American beverage service
industry. Due to its illegal operation, a huge number of establishments such
as bars/taverns, hotels, wineries, and distilleries ceased operations. The
vineyard has ceased to produce grapes. Many people lost their jobs and
government lost a large amount of revenue from the taxes generated from
those establishments resulting as one of the major causes as the Great
American Depression.
3. State the evolution of the bar.
- As time passes, bars have evolved from a variety of styles, as well as
distinct parts and locations in which they were placed.
State the development of beverage service industry in the Philippines.
In the Philippines, we can somehow associate the development of the beverage
service industry to the development of one of the pioneers in the beverage industry in
the Philippines, the San Miguel Corporation.
In 1890, Don Enrique Maria Barreto de Ycaza funded the La Fabrica de Cerveza
de San Miguel which is established in San Miguel district of Manila wherein it is the first
brewery in South East Asia. As years goes by in the year 1913, the La Fabrica de Cerveza
de San Miguel became a corporation and began exporting beer in Guam, Hongkong and
Shanghai this is the start were the corporation begins to discover more products
specially drinking products. Year 1922 the corporation started to produce softdrinks at
the Royal Soft Drinks Plant after 3 years, year 1925, it is started producing Ice Cream at
the Magnolia Ice Cream Plant. Many products are discovered as the corporation became
more popular inside and outside the country. In the year 1927 the corporation started

bottling of Coca Cola in the Philippines. The corporation also started the glass industry
in which they supplying the company’s bottling needs.
After 25 years San Miguel Brewery was renamed San Miguel Corporation; the
largest food, beverage and packaging company in the Philippines and until now the San
Miguel Corporation is still popular not only in the country but also outside the country,
because of its popularity the San Miguel Corporation is discovering more products that
they can sell to the country and to the other countries in the world.
