Classification Home and Life Sciences > Food Technology and Nutrition Available grade Achieved Explanatory notes 1 Definitions A definition of low cost may be set by the assessor or negotiated between the assessor and candidate. Sources of low cost food may include but are not limited to - lower cost stores, bulk buying, co-operative purchasing, and growing own food. A process is a number of related techniques or a planned sequence, a systematic series of actions such as stir-fry vegetables, bake bread. A technique is a single activity such as grate, chop, peel, grill. Appropriate processes and/or techniques are those which meet the requirements of the food. A meal demonstrates at least two processes. Prepared food refers to food that is to be, is being, or has been prepared by the candidate in terms of processes and/or techniques. The requirements of the nominated family can be determined by the assessor or can be negotiated between the assessor and the candidate. The nominated family should include but is not limited to - at least three people, with differing occupations, interests and activities. A family food budget must be set by the assessor or negotiated between the assessor and candidate. The family’s particular requirements may include but are not limited to - geographical location, family likes and dislikes, food preparation and eating facilities. Method of investigation must comply with the requirements of the Privacy Act 1993. 2 Learning activities carried out in relation to this unit standard must be conducted in a manner that is consistent with the Health and Safety in Employment Act 1992. 3 The learning outcomes in this unit standard are consistent with Health and Physical Education in the New Zealand Curriculum (Wellington: Learning Media, 1999). Evidence requirements 1.1 The description identifies food buying practices which enable economical purchases to be made. 1.2 The description identifies alternatives to buying food in terms of financial savings and use of other resources. 1.3 The description identifies advantages and disadvantages of low cost food for the consumer. 1.4 The description identifies planning practices which enable economical food purchase and preparation. Outcome 2 Plan nutritious meals for three days for a nominated family using low cost food. Evidence requirements 2.1 The food specified by the plan is consistent with the particular requirements of the nominated family and budget. 2.2 The food specified by the plan meets the relevant food and nutrition guidelines. Outcome 3 Prepare and serve a nutritious low cost meal for the family. Evidence requirements 3.1 Prepared food meets the identified needs of the nominated family. 3.2 Service of the food suits the nominated family. Range appearance of food, size of serving, use of condiments if necessary, manner of presentation.
