HAZARD ANALYSIS AND CRITICAL CONTROL POINTS (HACCP) HACCP is a food safety management system designed to identify and prevent microbial and other hazards in food production. It includes steps designed to prevent problems before they occur and to correct deviations as soon as they are detected. HACCP is endorsed by the National Academy of Sciences and the National Advisory Committee on Microbiological Criteria for Foods (NACMCF), and by the Codex Alimentarius Commission and the International Commission on Microbiological Specifications for Foods. ISO 9001:2008 Published by the International Organization for Standardization, ISO 9001 specifies the basic requirements for a quality management system (QMS) that an organization must fulfill to demonstrate its ability to consistently provide products (which include services) that enhance customer satisfaction and meet applicable statutory and regulatory requirements. GLOBAL FOOD SAFETY INITIATIVE FSSC 22000 The Global Food Safety Initiative (GFSI) is coordinated by The Food Business Forum CIES. This forum is a global food network made up of approximately 400 retailers and manufacturers worldwide. GFSI benchmarks food safety standards, evaluating them against a set of criteria to ensure the core of the standards are equivalent and certification will be acceptable. The Food Safety System Certification (FSSC) 22000 is one of 10 certification programs that can be used to certify to the GFSI. All 10 programs have been endorsed by GFSI and a successful audit to any one of them will result in certification that is endorsed by GFSI. FSSC 22000 is developed for the certification of food safety systems of food manufacturers that process or manufacture animal products, perishable vegetal products, products with a long shelf life and (other) food ingredients like additives, vitamins and bio-cultures. www.cpkelco.com E-mail: solutions@cpkelco.com
