TERROIRS In the rugged Vallée de l’Agly, the soils are composed of marls laden with black schist. The Corbières Mountains to the north and the winds from the Pyrenées to the south protect the vines from heat, rot and mildew by the winds while keeping yields naturally low. The valley enjoys 260 days of sunshine per year, with little precipitation. FARMING Sustainable farming, free of synthetic herbicides and pesticides. Grass growth and weeds are controlled in winter and spring through plowing. The nature of the soil does not permit any mechanization, so all vineyard work, from pruning to harvest, is done entirely by hand. GRAPE VARIETALS VINE AGE AVERAGE YIELD 80% Grenache, 20% Carignan 60 years on average 28 hectoliters per hectare WINEMAKING Upon arrival at the winery, the grapes are sorted and 100% de-stemmed. The grapes are fermented separately by varietal, and the wine is aged solely in stainless steel, allowing for a more approachable expression of this rocky terroir. Fermentations last for 5 to 6 weeks. The Carignan is fermented via carbonic maceration. The individual varietals are blended before bottling. No fining, light filtration. TASTING NOTES Earthy and rugged, yet fruity and bright, the “Nature de Schiste” cannot help but express both the fine and wild nature of its terroir. Its silky palate and balanced tannins make this a perfect pairing for leaner cuts of red meat and dark chocolate. ANNUAL PRODUCTION 24,000 bottles or 2,000 cases
