A leading entrepreneur and restaurateur in Jackson
Hole, Wyoming, Gavin Fine developed a passion for
the culinary world at a young age while working for
Lettuce Entertain You in Chicago. After graduating
from Cornell University's Hotel and Restaurant
Management School, Gavin began his journey into a
successful restaurant career with a move to the aweinspiring Tetons. Starting his career working in the
kitchen of the Snake River Grill with Roger Freedman,
Gavin and Roger quickly became friends and decided
to open a restaurant together – Rendezvous Bistro –
in 2001. After a number of years running The Bistro
together, Gavin and Roger opened their second
business together in 2003 (Bistro Catering). Many
years later and several businesses added to what is now
Fine Dining Restaurant Group, Gavin is considered a
premier restaurateur of the Rocky Mountain region.
Outside of his successful restaurants, Gavin is a
cornerstone of the Jackson Hole community. He
serves as a mentor and teacher to his employees.
Gavin, along with his wife, Lea, are loving parents of
two boys.
Roger Freedman
A graduate of the California Culinary Academy in San Francisco, Roger’s culinary pursuits originally led him
to Los Angeles where he became Chef de Cuisine at Maple Drive in Beverly Hills. After years working at
Maple Drive, Roger moved to Jackson Hole where he became a culinary pioneer in the area as founding
Executive Chef at the Snake River Grill that opened in 1993. Roger led the kitchen at Snake River Grill for
seven years before leaving to open Rendezvous Bistro with friend and business partner Gavin Fine. Roger
has been in the restaurant business for over 30 years, has worked alongside chefs like Daniel Boulud and
brings his experience, expertise and remarkable culinary talent to each of the Fine Dining Restaurant Group
kitchens, including Rendezvous Bistro, Bin22, The Kitchen, Q Roadhouse & Brewing Co. and Il Villaggio
Osteria.

Gavin Fine and Roger Freedman have been instrumental in putting Jackson Hole on the map as not just an
extreme ski spot but as a culinary destination as well. Along with good friend and chef, Roger, Gavin opened
the Rendezvous Bistro in 2001 to great success with both the local community and visitors, staking new
territory in his service standards, thoughtful food delivery, and dynamic spaces. Building on the instant
success of “The Bistro”, Gavin and Roger went on to create the Fine Dining Restaurant Group, including
Bistro Catering (2003), Q Roadhouse & Brewing Co. (2006), Il Villaggio Osteria (2008), The Kitchen (2011),
Bin22 (2012), Roadhouse Brewing Co. (2012) and most recently Bodega (Dec. 2014).
Since the founding of Rendezvous Bistro in 2001, Fine Dining Restaurant Group’s establishments have
become synonymous with quality, value, comfort, and innovation. Our carefully crafted menus emphasize
simplicity and the utilization of seasonal flavors and ingredients.

Since opening in 2001, “The Bistro” has become a favorite dining spot for both locals and returning visitors.
This sophisticated yet casual neighborhood restaurant features an extensive wine list, a raw bar offering fresh
and varied oysters daily, and a menu manifesting the creative talents behind Executive Chef Joel Tate. A
summer deck boasts an additional 25 seats and a 14-seat Community Table complete with an inset fireplace –
perfect for a small group gathering, or simply to exchange fishing and climbing tales with fellow diners. For
those with larger groups, our indoor private dining room accommodates up to 32 for celebrations of any kind.
The Bistro’s delectable cuisine features everything from fried chicken as Wednesday’s Daily Plate and
Wyoming beef tartare served with housemade potato chips, to moules frites and traditional veal marsala.
Paper and crayons adorn the white linen table clothes, showing this local favorite’s ability to appeal to patrons
