NZQA Expiring unit standard 6648 version 4 Page 1 of 3 Title Prepare, plan, and serve food for a special occasion Level 3 Credits 4 Purpose People credited with this unit standard are able to establish a food plan for a special occasion, and prepare and serve food for the special occasion. Classification Home and Life Sciences > Food Technology and Nutrition Available grade Achieved Explanatory notes 1 Definitions A special occasion can be defined by the assessor or can be negotiated between the assessor and candidate. Examples of special occasions include but are not limited to - a lunch for a principal and guests; a meal for a sports team/s; a theme picnic or party for children or adults; a food occasion for a large group such as wedding, supper for school ball, or a 21st birthday party. Prepare and serve food includes all tasks necessary to prepare and serve the menu agreed with the occasion holder. It may include but is not limited to - purchase of food and ingredients, preparation of dishes and foods on the menu, placing of food on serving dishes or in containers with appropriate garnishes, maintaining food safely at appropriate temperatures, demonstrating food service methods which meet requirements of occasion holder such as buffet, table service, clearing and cleaning at completion of special occasion. A process is a number of related techniques or a planned sequence, a systematic series of actions such as stir-fry vegetables, bake bread. A technique is a single activity such as grate, chop, peel, grill. Appropriate processes and/or techniques are those which meet the requirements of the food. A meal demonstrates at least two processes. A food preparation, production, and service plan lists and/or brief describes the tasks or steps to be followed to ensure that all tasks are completed by the agreed times. Clock times for each task or step should be included. All necessary steps including preliminary organisation and cleaning should be part of the time plan. Task descriptions for those involved can be developed from the food preparation and service plan. 2 The food preparation and serving can be carried out by groups of candidates working co-operatively and sharing responsibilities, but each candidate must achieve the performance criteria. Learning activities carried out in relation to this unit standard must be conducted in a manner that is consistent with the Health and Safety in Employment Act 1992. 4 The learning outcomes in this unit standard are consistent with Health and Physical Education in the New Zealand Curriculum (Wellington: Learning Media, 1999). Outcomes and evidence requirements Outcome 1 Establish a food plan for a special occasion. Evidence requirements 1.1 The requirements for the special occasion are identified to the satisfaction of the assessor. Range budget, number of people invited, venue, theme where required, food preparation and service facilities available, menu, times for serving food and other activities, other agreed requirements. 1.2 A purchasing plan is prepared to meet budget, food, and other agreed requirements. 1.3 A food preparation, production, and service plan enables all tasks to be completed, with food served at agreed times. 1.4 Task descriptions are prepared to enable food service and other requirements to be met at agreed times. Outcome 2 Prepare and serve food for the special occasion. Evidence requirements 2.1 The food is prepared and served to meet the requirements of the special occasion as agreed with the assessor. 2.2 The process and/or techniques used meets the requirements of the food specified in the plan. This unit standard is expiring. Assessment against the standard must take place by the last date for assessment set out below.
