Sides
Hereford Hop is a semi hard vegetarian cheese made from cow’s
milk, (In spite of its name, it is not produced in Herefordshire, but in
Gloustershire, by Charles Martell of Dymock.) The cheese is coated with
toasted hops after moulding. The hops are crunchy, with the slightly
bitter taste associated with beer, and contrast sharply with the mellow,
sweet and buttery cheese. The maturation period is from one to three
months. Beer Mustard is made using 6x,brewed by Wadworth of Devizes
