Pumpkin Chocolate Chip Muffins Yield- 12 regular or approx. 32 miniature Ingredients: 1 2/3 cup flour 1 cup sugar ½ teaspoon cinnamon 1 teaspoon baking powder ¼ teaspoon baking soda ¼ teaspoon salt 2 eggs 1 cup plain pumpkin ½ cup (1 stick) melted butter 1 cup chocolate chips Directions: 1. Pre-heat oven to 350 degrees. In a large bowl, mix the flour, sugar, baking soda, baking powder, cinnamon and salt together. 2. In a large glass liquid measuring cup, melt the butter for 40 to 50 seconds in the microwave. Make sure to cover with a paper towel. 3. In a separate large mixing bowl, whisk the eggs, pumpkin, and melted butter together. 4. Using a spoon, stir the chocolate chips into the pumpkin mixture. 5. Add half of the dry ingredients to the pumpkin mixture and stir just until combined. Add the rest of the flour and stir until just combined. Do not over mix! 6. Spray the miniature muffin pan with non stick spray. 7. Using a teaspoon from the flatware, scoop one teaspoon to fill the muffin pan ¾ of the way full. 8. Bake on bottom rack of the oven for 12 minutes, or until golden brown around the edges. 9. Let cool for a few minutes and serve! Enjoy!
