Mini Cheesecakes Yield: Ingredients: 24 vanilla wafers 2 packages cream cheese, softened 2 eggs 2 tablespoons lemon juice 2/3 cup white sugar 1 can cherry pie filling Directions: 1. Preheat oven to 350 degrees. 2. Line the mini muffin pan with the paper liners. Place one vanilla wafer in the bottom of each paper. 3. In a large bowl, beat the cream cheese until it’s fluffy. Add the eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined. 4. Fill each baking liner 2/3 full with cream cheese mixture. DO NOT FILL TO THE TOP! 5. Bake in preheated oven for 10 minutes. Leave out to completely cool down. Top with 1 cherry from the pie filling. You may also add a bit of whipped cream to top the cherry. Enjoy!
