Special Egyptian Rice
Yields: 6 cups of rice (or 12 servings)
Ingredients:
3 cups rice
½ cup onion
3Tbsp. Olive oil
5 ½ cups water
1 tsp. salt
Add oil to pan and sauté rice until all coated with oil,
Add 5 ½ cups of hot water and salt and bring to a boil.
Simmer without opening lid until all water is absorbed
While cooking make the mixture belowIngredients:
1 lb ground beef
1 onion, diced small
3 stalks of celery, diced small
1 cup raisins or crainraisins
1 cup chopped walnuts or other nuts (optional)
1 tsp. salt
1 tsp. pepper
1 tsp. all spice
1 Tbsp. soy sauce
1 Tbsp. Worchester sauce
½ cup water
Steps:
1. Brown ground beef and drain the fat – using a colander in a large bowl
(throw fat
2. Put ground beef in pan and add onions and celery
3. Cook until onions and celery are tender (slightly soft)
4. Add remaining ingredients to ground beef mixture
5. Add ground beef mixture to cooked rice
6. Mix well and return to stove until all water is absorbed
(**Make sure it is on LOW so it doesn’t stick to the pan)
