Range one species of bivalve molluscan shellfish; raw or cooked. Evidence is required for three different stages of quality. Evidence requirements 1.1 The description of the characteristics of bivalve molluscan shellfish quality is consistent with industry guidelines. Range 1.2 quality characteristics include but are not limited to – texture, flavour, smell. The description includes the reasons for the bivalve molluscan shellfish being in the different stages of quality.
