People credited with this unit standard are able to monitor
the hygiene status of the ship's catering and crew
accommodation, passageways and recreation areas;
supervise hygiene activity; and advise on the hygiene status
of equipment and facilities.

moderation option:
A centrally established and directed moderation system has
been established by Competenz.
special notes:
Guidelines on the ship’s hygiene would include: Company
and Master’s Standing Orders; the Maritime Transport Act
1994; and Code of Safe Working Practice.
Procedures relating to cleaning and maintenance of surfaces
and fittings are detailed in Ship’s Standing Orders.

Elements and Performance Criteria
element 1
Monitor ship’s hygiene.
Range:
hygiene in galley, living spaces, dining areas, offices, and passageways.
performance criteria
1.1
The activities of personnel preparing, cooking and presenting food are
monitored to ensure that food is stored, handled and prepared according to
company procedures, instructions and legislative regulations.
1.2
Living spaces, dining areas, offices and passageways are monitored to ensure
that areas are cleaned in accordance with ship routines and standing orders,
within the time-frames prescribed in company procedures.
Range:
1.3
toilets, bathrooms and showers; table surfaces and fittings in
dining rooms; offices; accommodation and recreation spaces;
passageways; food storage; preparation and cooking areas, and
associated equipment items.
Activities conducted which do not meet company standards of hygiene are
identified, highlighted to parties responsible and rectified through corrective
action.
Range:
corrective action may include – detailing actions to other parties,
rectifying situation personally, implementing initiatives to reduce
future likelihood of repeat occurrences.

2.1
Standards of hygiene are communicated to personnel responsible for their
maintenance and any deficiencies identified are rectified by that person(s).

2.2
Feedback obtained from reports and personal observation of hygiene practices
is assessed against the standards of cleanliness stipulated in prescribed
guidelines.
Range:
verbal and written reports.
2.3
Receptacles for rubbish are supplied and emptied on a regular basis into
approved storage bins to await transfer for shore disposal.
2.4
Stocks of soap and towelling are available to assist with personal hygiene.
2.5
Rubbish and food scraps are placed in the correct receptacles and emptied into
the correct storage bins to await transfer to disposal areas.
2.6
Pest eradication needs are ascertained and measures implemented to remove
ship board pests and vermin.
