Deposit and shape bulk cake batters using automated production

Purpose
This unit standard is for people working or intending to work in
a bakery which uses automated production equipment. People
credited with this unit standard are able to: use safe working
practices; prepare to deposit bulk cake batters using automated
production equipment; deposit bulk cake batters using
automated production equipment; shape cake batters; and
disassemble, clean, and reassemble automated production
equipment.

Range
Batters may be those used for any of: plain cakes, fruited cakes, sponges, varietal
sweet products such as fruit loaves.
Ingredients may include but are not limited to: flour, sugar, water, butter, fats, eggs,
baking powder, salt, essences, sweeteners, flavourings, preservatives, emulsifiers,
pre-mixes, concentrates, additives, fruits, nuts, yeast, humectants.
Equipment includes automated depositing equipment and may also include but is not
limited to: extruder, pressure box, scraper, conveyors, wires, knives, floats.

Definitions
Shaping refers to distributing deposited cake batter evenly within the tin or tray.

Organisational procedures refers to documents that include: worksite rules, codes,
and practices; equipment operating instructions; production specifications;
documented quality management systems; and health and safety requirements.
PPE refers to personal protective equipment and may include but is not limited to:
protective clothing; gloves; safety glasses, headwear, and footwear; hearing
protection; safety devices.

Competence is to be demonstrated on three occasions of depositing and shaping
bulk cake batters using automated production equipment.

equipment performance and production yield.

3.1
Equipment is operated in accordance with organisational procedures.

Batter is deposited in accordance with product specifications and organisational
procedures.
Range

Batter wastage is minimised and opportunities to rework non-conforming batter
are maximised in accordance with organisational procedures.

Variations in batter consistency and equipment are identified, and rectified
and/or reported in accordance with organisational procedures.

Equipment is clean, free from contamination, and operational in accordance with

Deposited cake batters are shaped into the tin or tray in accordance with
product specifications.

Variations in batter consistency and equipment are identified, and rectified

Disassemble, clean, and reassemble automated production equipment.

Affected parties are notified of disassembly and cleaning in accordance with
organisational procedures.
