Definition
Organisational requirements – refer to instructions to staff on policy and procedures
which are documented in memo or manual format and are available in the workplace.
These requirements include but are not limited to – site specific requirements,
company quality management requirements, legislative requirements.

This unit standard must be assessed in a realistic workplace environment. The
candidate must be under realistic time pressures and use relevant commercial
equipment.

Carry out pure culture vessel (PCV) operations in a bakers yeast manufacturing operation.
Evidence requirements
1.1
PCV flasks are incubated in accordance with organisational requirements.
1.2
PCV is inoculated with yeast and malt extract solution in accordance with
organisational requirements.

1.3
PCV is monitored and tested in accordance with organisational requirements.
1.4
PCV is steamed to ensure all the contents of the PCV are sterile in accordance
with organisational requirements.
1.5
PCV is transferred to the fermenter in accordance with organisational
requirements.
1.6
PCV tank is cleaned ready for operation in accordance with organisational
requirements.
