The purpose of this qualification is to provide the retail meat industry with people who can independently manage the operational aspects of a retail meat business.
The qualification is designed for people who wish to further develop their managerial, technical and/or operational knowledge and skills to manage a Retail Meat Operation.
Graduates will be able to forecast and select meat product, assess meat quality, determine yield, and manage merchandising, staff and business performance in a retail meat operation.
Graduates of this qualification will be able to:
- Forecast product requirements, and carry out product selection and ordering to manage in-store or independent retail meat operations.
- Apply knowledge of carcass meat quality and primal cuts, and determine yield ratios and trade calculations applicable to retail meat to minimise wastage and maximise profit in a retail meat operation.
- Use business performance measures to manage merchandising and sales within a retail meat operation.
- Manage staffing and projects in a retail meat operation
This qualification builds on the New Zealand Certificate in Trade
Butchery (Level 4) with optional strands in Carcass Breaking and
Boning, Curing and Smoking, and Handcrafted Small Goods
[Ref: 2972].
This is the highest level Retail Meat qualification.

Graduates of this qualification will be equipped to manage in

Qualification award This qualification may be awarded by any organisation with an approved programme of study or industry training programme.
Evidence requirements for assuring consistency
Evidence must include the following:
- Employer surveys to determine if graduates of the qualification meet the graduate profile outcomes.
- Evidence of effective processes to ensure programmes continue to meet current industry needs.
- A range of workplace evidence demonstrating that graduates meet the graduate profile outcomes.
- Any other relevant evidence as appropriate.

Candidates must hold the New Zealand Certificate in Trade
Butchery (Level 4) with optional strands in Carcass Breaking and
Boning, Curing and Smoking, and Handcrafted Small Goods
[Ref: 2972] or equivalent skills, knowledge and experience.

Replacement information This qualification replaced the National Certificate in Meat Retailing
(Forecasting, Purchasing and Production) (Level 4) [Ref: 1213].
People currently working towards the replaced qualification may either complete the requirements for this qualification by 31 December 2019 or transfer their results to the replacement New Zealand qualification.
New enrolments into programmes leading to the replaced qualification will not be accepted after
31 December 2017.
It is anticipated that no existing candidates will be disadvantaged by these transition arrangements.
However, anyone who feels that they have been disadvantaged may appeal to Competenz at the address below. Appeals will be considered on a case-by-case basis.
